This time I will have it in the fall (though it is still summer).
The ginjo aroma reminded me of muscat, and the taste was smooth and mellow.
I will continue to enjoy this sake as one of my most memorable sakes!

Continuing with my new discovery, I found this one on the menu, which I gave up one type of sake in tears on my recent trip to Shinshu, so I chose it as my revenge.
Ding Junmai Ginjo Nama Shu (Junmai Ginjo Nama Shu)
The aroma of rice with a hint of sweetness, the mouthfeel is faintly sweet but firm, and the finish is clean and crisp, with a lingering sweet apple-like aftertaste typical of Shinshu sake.
I regret not buying it at Miyajima Sake Shop 😭.
Along with the limited edition KEG bottle of Daishinshu, it's a reminder of my trip to Shinshu💦.

Today is September, and the first autumn sake of the year is from Ueda City, Nagano Prefecture.
The name "Ding" conjures up images of a fresh, unfiltered, raw sake, but the autumn-aged version has a strong flavor and a rich, ginjo-style sweetness. It also has a surprisingly strong dryness, and was a perfect match for the first grilled Akitagari fish of the year.
Immediately after opening the bottle in refrigeration, it has a sake-like sweetness and supporting bitterness. The acidity does not come forward, but the impression is clear and easy to drink.
The second bottle in Kesennuma Oshima, Ding ✨.
I bought this bottle when I went to Nagano on this great adventure called "homecoming".
I had already been carrying around a bottle all this trip without sending it (my husband) all the way, just to encourage him to pair the Ding with the sumptuous seafood at this Kaiho 😍.
According to the liquor store where we bought it, it is fruity and popular number 1 ❣️.
Ding is produced by three graduates of Tokyo University of Agriculture.
The fruity aroma is gorgeous. It is super soft and has a gentle sweetness. I think I know what Jyushiyo means when I say that it has a smooth, elegant sweetness and a sharpness that goes well with it👍.
