The other night, I had dinner with a junior member of my current team. He doesn't drink, but he has heard from his friends that sake lingers until the next day.
I told him that it is not because of sake, but because of too much alcohol, whether it is beer or shochu. It's the same with beer and shochu! There is still a tendency to treat sake as a bad thing, isn't there?
So, this time, I found a small bottle of Tokigen by chance and tasted it. It was light on the palate with a refreshing aftertaste. It was a good choice for those who say "I don't like sake...".

GW Sake Activities and the First Part of the Day
We met up with my parents-in-law's team and went to today's hotel without incident.
After soaking in the hot spring, we went to dinner.
After the bath, we toasted with beer and my father-in-law invited us to drink some sake, so we chose this one from Ishikawa's many local sake brands and had a drink 🍶.
Tsunekigen Ginjo-Nama-Shu.
The aroma of rice is full, the taste is soft, and it finishes with a gentle aftertaste.
Even my brother-in-law, who is not a big sake drinker, found it easy to drink because of its gentle taste 😁.

It was hot like summer in GW. We had summer earlier than usual. (But it's been stored in the fridge for a year...)
Speaking of Tokigen, I remember the sake brewed by Mr. Touji Noriguchi, a famous toji (master brewer). I was still a young boy who didn't know what sake tasted like (and I still don't know what sake tastes like now), but the sake I bought with great enthusiasm was KISS of FIRE made by Touji Noguchi. It was easy to drink like water, but the fruity, full-bodied flavor was a huge shock to me.
It is one of the sakes that I have a strong attachment to and that led me to my current love of sake.
Now, let's talk about the current sake.
Just like the cool label, it tastes fresh, lush, and clean. It is smooth and easy to drink. Yet, the robust flavor overflows with a sense of happiness.
We had fresh sashimi with it 🐟. The fat was washed out, but it blended well with the deliciousness of the dish.
I am grateful for the sake that reminded me of one of the origins of my own love for sake.

The aroma is a comparatively mild ginjo aroma.
It has a soft sweetness and umami of rice at room temperature.
It is a sake with a good mouthfeel.

It's a small thing, but it's the second one to support Ishikawa Prefecture.
The crown was pushed up and slipped out with little resistance 😁.
The aroma is fresh and not strong.
The color is clear and slightly yellow.
I'll take it 😉.
The acidity is clear 😏.
The mouthfeel is very refreshing, not to say it is thick, and it goes all the way to the nose.
It is soda-like freshness. It also feels fresh 😚.
However, by the time it goes down your throat after you take it in your mouth, spiciness, astringency, and bitterness appear on your tongue, accompanied by the rice flavor of Hyakumangoku No Shiro.
On the chin, something like the taste of Hyakumangoku-no-shiro remains 😎 It is pleasant because it is not unpleasant 😋.
On the third day, the taste changed, a little sweetness appeared on the palate, followed by pungency, astringency, and bitterness 😁.
I feel that it has become easier to drink 🤤.
