The bitterness lingers in the aftertaste. Drinking it for a long time, it is like a refreshing plum wine. Warmed. The aroma of sweetness and vitamin-like acidity. The sourness is just so strong! The sourness is just so strong...! The heat of the alcohol is felt on the tongue and upper jaw. It's like drinking a hot, refreshing honey plum liqueur. It has a rich umami flavor that is typical of junmai. The acidity is gently blended with the flavor of the rice. The taste is pure and delicious. The bitterness creates a smooth landing, I feel. When swallowed, it has a tea-like, aromatic, and exotic aroma like lychee, I think. Delicious. I don't see Kaze no Mori anywhere near me, but when I do find it, I'll definitely give it a try.

Nara Prefecture Bodai Moto Junmai Sake Rice polishing ratio 70%. Alcohol 17%. Rice 100% Hinohikari produced in Bodaiyama-cho It has a strong yellowish hue. Extremely rich sweetness. It tastes like pineapple juice, not so much flavored as pineapple itself. It tastes like a sake brewed with pineapple, very sweet and delicious.

Bodaiyuan Sake I thought it was less sweet and less deep than the usual Takacho, but it might be because my nose is out of order due to a cold. Although it has a sake degree of -30 degrees, it is sweet and dry with a sharpness in the second half without being cloying. I still love the robustness of this sake.

Nara Pref. Gosho City. Aburacho Brewery Co. Takacho Bodimotos Junmai Purchased at the Bodaihashi Festival at Shoreki-ji Temple. Aburanaga Sake Brewery is a popular brewer in Kaze no Mori. The amazake we drank at the festival was sweet and tasty because it was made with sake lees from the Aburanaga Sake Brewery this time 😋. Sake made with Bodhi Hashiroshi from Shorekiji Temple has a sticker on it. We will have it at room temperature. Pour it into a glass and you will be surprised at the bright yellow color. The yellow color of an energy drink 😆. The heady aroma is distinctive, but I wonder if it's pineapple or apple 🤔. The ripe aroma continues, but is it sherry? Shaoxing wine? It also smells like sherry or Shaoxing wine. The palate is dense sweetness and acidity. It is extremely rich, full-bodied, and sweet. The ripe aroma coming out from the nose enhances the richness of the wine. While the sweetness continues, the soft acidity makes the taste finish. Addictive acidity that those who like it will get addicted to 🤣. Dessert wine? Guijinshu? Shaoxing wine? What a strange taste. I heard at the liquor store that the Alpha series of Kaze no Mori is changing to Bodai yeast yeast production 🤔. Tonight, another brand of Kaze no Mori's Aburacho Sake Brewery here 💁. It is brewed with Junmai Bodai yeast and has a Sake degree of minus 34 ‼️ I imagined it would be very sweet and I was afraid to open the bottle because I thought it might not be my favorite. It has the aroma of roasted brown rice, the firm sweetness of aged sherry, the acidity that is typical of Aburacho makes it light overall, and the dryness of distilled spirits that is similar to whiskey lands at the right middle point. 😋😋😋 It exceeded my expectations✨ Before dinner, after dinner, or alone as a nightcap 👌

When poured into a wine glass, it has a very yellow color and the aroma has a pronounced sweetness. The impression on the palate is as the aroma suggests, but the aftertaste is sweet without being cloying or cloying. The sweetness blends well with the spicy Szechuan cuisine I just had. PS) I read in other posts that it is sweet like caramel, so if you don't like sweet type, it may not be suitable for you. I guess this sweetness must have been popular as a luxury sake in the Muromachi period.

I thought I felt a slight chill last Wednesday evening, and by Thursday I had a slight fever. Even a persistent cough on Friday😱. Even though 3 of my roommates were having similar symptoms every few days. I was relieved that I was the only one ok, but then I got the worst one at the end 😭. I don't feel like drinking when I'm sick. Please take good care of your health so that you can enjoy the sake life 😤. Now for my rehabilitation, I thought I'd try something easy to drink, so I got this sake that was sleeping in the fridge❗️. It is said that it is made by combining the brewing method created in the Muromachi period (1333-1573) with the modern brewing method. Take a sip...oh, it's sweet! I prefer sweet sake to light and dry sake, but this was too sweet 😥. It is not a sake to be consumed in large quantities, but to be enjoyed after a meal or two to refresh the palate. I've never had a kijoshu yet and wanted to try it once, but I wonder if it tastes like this 🫥.
