I bought it at a liquor store, where it was recommended to me if you like Kaze no Mori. It has a slightly thickened flavor and umami. It goes well with bamboo shoots. It was my favorite.
Bodaiyuan Sake
I thought it was less sweet and less deep than the usual Takacho, but it might be because my nose is out of order due to a cold.
Although it has a sake degree of -30 degrees, it is sweet and dry with a sharpness in the second half without being cloying.
I still love the robustness of this sake.

Aburanaga Sake Brewery is a popular brewer in Kaze no Mori.
The amazake we drank at the festival was sweet and tasty because it was made with sake lees from the Aburanaga Sake Brewery this time 😋.
Sake made with Bodhi Hashiroshi from Shorekiji Temple has a sticker on it.

It is brewed with Junmai Bodai yeast and has a Sake degree of minus 34 ‼️ I imagined it would be very sweet and I was afraid to open the bottle because I thought it might not be my favorite.
It has the aroma of roasted brown rice, the firm sweetness of aged sherry, the acidity that is typical of Aburacho makes it light overall, and the dryness of distilled spirits that is similar to whiskey lands at the right middle point. 😋😋😋

Now for my rehabilitation, I thought I'd try something easy to drink, so I got this sake that was sleeping in the fridge❗️.
It is said that it is made by combining the brewing method created in the Muromachi period (1333-1573) with the modern brewing method.

I prefer sweet sake to light and dry sake, but this was too sweet 😥.
It is not a sake to be consumed in large quantities, but to be enjoyed after a meal or two to refresh the palate.
