2022BY. 2 to 3 years old sake.
It has a sweet and umami taste with a sense of maturity. It is good heated up to enjoy its crispness, or chilled to enjoy it.
Niida Sake Brewery is an old brewery established 300 years ago in Koriyama, Fukushima Prefecture. It is known for its Niida Zenshu, which is made with pesticide-free rice and sake yeast.
The name "Melon 3.33" comes from the fact that the rice used in the fourth stage of the four-stage brewing process is 1/3 of the normal amount, making it a little less sweet.
Nigori Melon," served in a Cheerio-like fluorescent green sake bottle, is, as the name suggests, a light nigori sake with an impressive silky throat. The melon-like sweetness is subdued and mild.

It was hard to drink because it had too much punch right after opening, but after a while it settled down as the fermentation progressed and it was delicious!
It was slightly golden in color with an almond-like aroma of maturity.
It is a naturally occurring sake made with sake yeast and brewer's yeast, so it has a full flavor of rice and acidity.
I felt a ripe sweetness like dried apple.
Unlike most aged sake, it was easy to drink, with a clear, refreshing quality despite its thickening.
This is a delicious sake that should be enjoyed in small sips.

I finally had a chance to drink Niidashi Zenshu. The taste was in line with its amber-colored appearance, and although some people might think it was old-fashioned, I thought it was a sake that gave the impression of being true to the basics.
It was well accepted even by people who do not drink sake very often, which made me realize that it is a sake that is often featured in "Sake-no-wa".
