Patagonia Provisions’ original "shizen-shu", certified Regenerative Organic.
It’s brewed with 100% Omachi rice, using well water and traditional wooden vats made from the brewery’s own cedar forest.
Upon opening, it greeted me with a citrusy aroma and a refreshing acidity.

I can't drink it fast, but I feel it's good enough to enjoy.
Since the Jishu is limited to one set, we subsequently ordered the B set. This is my first time to try Niidashi Zenshu.
The aroma is faint. The sweetness is moderate, and the umami and bitterness are pleasant. It is a sake to be enjoyed carefully.
Purchased at Wakaba Sake Shop. A pesticide-free, fertilizer-free, additive-free natural sake. Mild and fruity aroma, with a tangy bitterness at the end of the sweetness. The sake was easy to drink but gave the impression of having a strong core.

The moment it enters the mouth, it has a flavor typical of old-fashioned sake. Later, sweetness and savory aroma rise to the surface. It is like a combination of the best parts of old and modern sake.
