It is a sake brewed by three brothers who are the only family members in the family. I bought it because it was the first time I had ever tasted a sake brewed with Nikomaru other than Hiran. I was advised that it blows a little when opening the bottle, so I opened the bottle with caution. I let it rise to the surface a little, tighten it, and then loosen it a little and let the bubbles rise for about 10 seconds. I was able to open the bottle successfully👍 We will drink it cold. The supernatant was not drunk due to automatic stirring. The color is cloudy with fine bubbles rising for a short while. The aroma is mild, with a hint of melon. It has a slight melon-like aroma. The mouthfeel is a little bubbly. The taste starts with a bitter bitterness, and when swallowed, a slight rice flavor spreads and tightens up, The sake is crisp and clear, even though it is negative. I'm not sure about the Nikomaru-ness, but I've had a lot of light nigori that are bitter 🤔. I have seen Takeda's "Ehime Ichie" before, but this was my first time to taste "Nihon Kokoro". The brewing water is from the "Uchinuki" spring in the Ishizuchi mountain range. Ehimeichikai" is a new brand launched by Shozo Takeda, the head brewer of the brewery. Nihon Shin Michi Junmai Daiginjo A well-balanced, high quality sake with sweetness, umami, and bitterness. It has a little bit of a tang. I think it would have been better if it was chilled. The label is a chic black and white horizontal stripe, I don't know what kind of sake it is😅.

Nakagusuku Honke Sake Brewing Company is a small, family-run brewery located deep in a mountain village on the border with Kochi Prefecture, producing less than 200 koku of sake. No wonder you don't see them in the Kansai region. Jogawago Daiginjo Shizukushuzake Sotsukku Ichi It is spicy from the start, but clean and refreshing. Elegant sweetness and spiciness. I was surprised that it came in a small light green bottle for the sake on display. I had to try this rare brand of high quality sake!
