Today we had Junmai Unfiltered Nama-Ginjo and Junmai-Ginjo.
The taste is elegant, sweet and fruity, and then moves to bitter and full-bodied.
It is still delicious.

As I trid this, I felt refreshing taste like Natsuzake.
Aroma is very rich and tastes fruity, but it doesn't annoyingly last because of No.7 yeast, I guess.
It's very good with Japanese dishes and seafood like sashimi.
Finally opened a bottle of this souvenir from the Suwa Gokura pilgrimage.
The ginjo aroma is not so strong, and for a 15% alcohol content, it feels strong. However, it is also elegant.
The name comes from Yeast No. 1 & No. 2 which was discovered 100 years ago. Among the seven Obuse Winery sake being tasted on the night, this version comes with the fullest body. Frankly, after 4 similar sakes, I feel it may be a bit too heavy for me. May not be fair, but thats what I feel. It is also more on the sourness and umami side instead of fruity sweetness.
Trois used another ancient yeast - Number 3. Comparing with Numero Six, it is much leas fruity. It is overall quite light body and incline to the lactic acid side - cream, yogurt. Slight umami, well balanced.
Using the oldest yeast Number 1. Comparing to Numero Six, Numero Un has a weaker smell, though the features are very similar, melon & banana on the sweet side and slight lactic acid - more like yogurt. On palate it gives you same stuffs, with clear umami spot towards the end, a little bit of cheese I think. Not a very full body one but clearly shows the difference.

Purchased at a souvenir shop at Matsumoto station.
I bought it with high expectations because it was labeled as a sweet sake with a sake degree of -20 degrees.
When I actually tried it, it was quite dry. It has a strong acidity and a strong peculiarity.
Among muddy sake, the drinkability may be suitable for professionals.
It was a sake that still had a high hurdle for me.

Taisetsukei Brewery is located in Azumino, Shinshu. It is a very alpine sake brewery that takes its name from the Hakuba Daisetsuekei mountain range and advocates "mountain sake.
This product bears the name of Mt. It has an apple-like ginjo aroma, a characteristic of the Alpine yeast born in Nagano. It is sweet, fruity, and easy to drink, but because it is a pure sake, you will find yourself getting drunk before you know it, making it a bit of a dangerous drink.
