Finally got a chance to try Juyondai in a restaurant. Distinctive melon and banana on nose, clean and elegantly done. Smooth with the same fruitiness taste, also comes with bit of rice sweetness. Not much acidity is being spot. Nicely done with crispy finish. Just I will not buy at a very high price :P

First time drinking a sake using this Hokkaido special rice きたしずく. When opening the bottle, i can smell a little bit of umami and saltiness. But when pouring into class it is the melon and banana fruitiness that have taken the prominence. A bit sour on the yogurt and milk side, to me it is not towards citrus. Quite some after taste. Not too rich, but it is easy to drink as light body.

Some fresh sake from the trip in Sado island. A very small and raw sake brewery. Would say it is quite a standard one - lemonish yellow in color, melon and banana on nose. Palate it leans more towards cream and fresh cheese, with slight hint of soy sauce and umami. Overall the alcohol feel is a bit too prominent though, can blend together better.

Complicated yet elegant sake. Fruity sweetness on nose, plus cooked rice and yogurt, cream. Umami is also spot. On palate it is similar, while the tastes blend together really well. Creamy and smooth texture with long finish. Nicely done.

I don’t think it will be a good selling sake but indeed its quality totally worths the price. Melon and banana fruity sweetness on smell and palate, also smooth yogurt and milk feel. Slight umami at the end. Clean and crispy, what do you expect more?

Standard Daiginjo - fresh melon and banana on both nose & palate. I don’t think there is much other characteristics - slightly raw rice sweetness. I would think the mint (bamboo, mint) is a bit too prominent - perhaps due to the addition of brewing alcohol. Still nice to match with seafood after all.

Soft and smooth smell of lactic acid - like fresh cheese and yogurt. It is rich in taste, but very elegantly presented with a light body, so you wont be too full when drinking it. The taste tends more to fresh cheese, also prominent umami is spot. Slight nutty feel of roasted nuts. Also some mineral feel at the end but very balanced.

The feeling is a bit rough, with carbonic acid and a hard feel. More sour and mineral taste with some umami. Not very special though.

Not a bad sake to start with - a little bit of carbonic acid freshness feel. Apple and melon on smell, while it tastes a little bit sour like fresh cheese and yogurt. Patch of bitterness spot at the end with some minerals feeling. Perhaps good to go with seafood.

Very complicated yet elegant sake. First thing that comes to my nose is the saltiness of fresh and mozarella cheese, together with a bit of cream feel. Then it comes a bit of rice sweetness, more towards cooked rice. On palate similar elements are spot which are very well balanced. I think it is a very well made sake and is perfectly matched with uni. The after taste is long and umami is also spot at end. Great finishing!

Nothing much memorable - pear taste, all fruitiness, no other stuffs are spotted. Though easy to drink but a bit too plain for me.

Light and full of fruity sweetness aroma, also with some rice sweetness - both raw and cooked rice. Other than that not much stuffs are spot - a pure one which I may want to have more complexity in.

Frankly sometimes I think Akabu is too sweet for me. But this special collaboration with 中務 is something different - on palate it comes with fruity sweetness like melon & banana, but the sourness is quite prominent when tasting - slight hint of citrus and lime. Also lactic acid feel of yogurt cream and milk is spot to balance the sweetness. Bitter tastes like tangerine at the end - which adds a level of complexity to this sake. Mild finishing. Overall a well balanced sake!

A bit of carbonic acid feel - quite some residue as it is a nigori but not very rich in nature. It is also quite light body which comes with fruity and rice sweetness. Not much other stuffs are spot.

Lots of bubbles so need to be careful when opening the bottle. Always good to use this to start a feast - light body and slight sourness, also comes with some fruity sweetness. Fresh and easy to drink.

Not very sweet in general - richer than the types using single yeast and still shows the strength of Yeast 1 which usually gives you sour and umami feel. Frankly a bit too full after all the obuse tasting.

The name comes from Yeast No. 1 & No. 2 which was discovered 100 years ago. Among the seven Obuse Winery sake being tasted on the night, this version comes with the fullest body. Frankly, after 4 similar sakes, I feel it may be a bit too heavy for me. May not be fair, but thats what I feel. It is also more on the sourness and umami side instead of fruity sweetness.
