A nice fruity Sake that has a mild peach flavor and a good level of umami. A fine Sake to drink on its own or with food.

Has a smooth Karakuchi flavor.
If the label didn’t tell me, I would never guess that it’s a Yamahai or Junmai or even a Genshu. This Iono avoids the extreme flavors from each of those categories
It DOES NOT have a chewy full flavor of a yamahai or Junmai. It does not have an overly sharp alcohol flavor like some Genshus
It’s very well balanced!

Fairly cloudy
Initial flavor has a Pronounced acidity stings the back of my tongue. Umami sweetness lingers. This is very nice to drink by itself.
Oh! Mixing the 澱 really brings out a much fuller flavor. Delicious!
Pairs well with sashimi/sushi. Does not lose to Okra 朝付け.
Can’t wait to try other sake from this 蔵。

Initial flavor is slightly bitter and medium dry. A tangy finish with a mild sweetness that coats your mouth. A good solid Sake 👍
Paired nicely with lemon butter salmon foil Yaki, pork & 行者ニンニク but not as well with soft cheeses.

Smooth and easy to drink like water. A good supporting actor with tempura soba and Ikura-don. A very pleasant sake with food but it does not have a strong personality on its own.

Initial flavor is big and fruity with a tangy finish. Koji flavor is also strong giving this a broad umami flavor that doesn’t lose to a garlicky 豚丼

Tangy and fruity
Pairing with oyster brings out a flash of umami from the oyster that is then washed over with a wave of sweetness from the Sake.
