CRAFT SAKE WEEK 2025.
We participated in the Day 6 "History Brewed by One Sake". A distinguished lineup of 10 breweries that have been in business for over 250 years.
From Fukkai, which we received the other day, we compared the Yamada-Nishiki made by conventional farming method and the Yamada-Nishiki made without agricultural chemicals, although the manufacturing method was the same as that of nama-shu and nikkumi.
Both have a fresh gaseous taste. The conventionally farmed Yamadanishiki has a more direct sweetness, while the pesticide-free Yamadanishiki is more refreshing and has a deeper flavor. Both were delicious!
Second of the night (theme is “Brewed with History”). 4 coins.
Very dry but with a fruity finish, if that makes sense. To me, better as an aperitif, as a stand alone without food.

My only 8 coin purchase (maybe ever?) and worth it. Great flavors & balance. Sad I was standing in a convention setting and not at home with my bride & dog, & home food. Really good stuff.

The aroma is similar to that of Hozasu |Roku Nozomi, and is still bananas. The fruit aroma is milder here, but the rice aroma is more enjoyable.
The acidity and bitterness are also less pronounced. The sweetness is thick and thick like that of bananas. It's so good!

The aroma is surprisingly banana itself. It is said to be brewed in a wooden vat, but the aroma is banana rather than cedar.
The taste is also 70% banana (although I had a preconceived notion based on the aroma), and 30% pineapple-like sweet and sour with a refreshing aftertaste. The aftertaste is slightly bitter. The taste is complex and unique to the sake.
Oh, my goodness! I am glad I could have the sansho I longed for. Thank you very much.
CRAFT SAKE WEEK 2025 Part 2.
Juicy, refreshing sweetness like muscat and green apple. The acidity of white yeast rice gives it a clean aftertaste. The bitterness is almost imperceptible.
Certainly an "unorthodox" taste that is far removed from sake. White wine? Cider? No, it is a juice. Easy to drink, but too much.

Among all the gorgeous sake breweries, Niimasa was the most popular and there was a long line.

This year we participated again in Craft Sake Week, now the largest sake event in Japan. We will start off with a limited edition draft sake made with locally grown organic rice from Mie 🤎.
