It is called light nigorigo, but it is almost like a clear sake. Gorgeous banana aroma. It has a very soft, sweet-tasting mouthfeel reminiscent of bananas and peaches, with a hint of freshness. It can be said to be like a spring sake, but it also has a slightly blurred impression.

First Rihachi. It has a soft and clear flavor. It also has a subdued sense of freshness, perhaps due to the time since the bottle was opened. Although the fruity flavor described on the label on the back of the bottle was not so apparent, the impression was that it was light and easy to drink for a San'in sake.

The first Yamasan. It has a clear, crisp flavor, with a moderate sweetness and a hint of acidity. The sense of freshness is subdued, perhaps because the bottle has been open for some time. As always, a great lineup of sake.

I asked for Hitogokochi and the owner let me try Yamae Nishiki as well 😅This is the first time for me to try Yamae Nishiki hiyake. It has a fruity melon aroma. The clear, soft, elegant sweetness and deliciousness that is typical of Shinshu Kamerei is impressive. If you want to drink it by itself, this is the one. I finished the day with shrimp, cream, and a batch of rice (photo #4).

This is a sake from the Kitanishi Brewery, which is neither Sairai nor Bunraku. This is the first time I've seen it. It has a banana and pineapple aroma. It has a sweet flavor reminiscent of Sairai, and as the label on the back says, it has a strong peachy sweetness.

First Hoshikai. Banana-like aroma. It is petit fresh and has a sweet and juicy flavor that is typical of Kangiku, and the sharpness is not bad either. As the label on the back says, there is a gentle, subtle pineapple-like tropical fruitiness.
