It has the juiciness typical of Kangiku, but it also has a mineral heaviness, perhaps due to the water. It does not have the flamboyance of a draft sake, but has the subtle freshness of an ichibiki.

I asked for Hitogokochi and the owner let me try Yamae Nishiki as well 😅This is the first time for me to try Yamae Nishiki hiyake. It has a fruity melon aroma. The clear, soft, elegant sweetness and deliciousness that is typical of Shinshu Kamerei is impressive. If you want to drink it by itself, this is the one. I finished the day with shrimp, cream, and a batch of rice (photo #4).

This is a sake from the Kitanishi Brewery, which is neither Sairai nor Bunraku. This is the first time I've seen it. It has a banana and pineapple aroma. It has a sweet flavor reminiscent of Sairai, and as the label on the back says, it has a strong peachy sweetness.

First Hoshikai. Banana-like aroma. It is petit fresh and has a sweet and juicy flavor that is typical of Kangiku, and the sharpness is not bad either. As the label on the back says, there is a gentle, subtle pineapple-like tropical fruitiness.

Yesterday's closing was the first Kinkame. Gorgeous pineapple fruity aroma. Very clear and gentle, full of melon-pineapple-like fruity sensation, yet it disappears without any sweetness.
