It's been a long time since I've had Shinsei. It's been three years. It was cosmos then, too. The spicy aroma of the wooden vat is in the air. It has an austere aroma like red wine. The spicy flavor of the wooden vat is also present in the taste, and combined with the strong acidity, it is very tasty.

Gunma Izumi Junmai Hatsushibori. A moderately large corkage is visible. The aroma of alcohol is tingling, mixed with a sweet aroma like calpis. It is rich and thick. Sweet, sour, bitter, delicious, and every flavor is strong. Is this Yamahai? It has a unique sourness and richness, but...there is no description of it anywhere.

Zanso Horai made with Gohyakumangoku. Rich sweet aroma like banana mixed with LaFrance. In the mouth...Namahashi? Yamahai? The characteristic acidity is abundant and spreads with the umami. The final touch is the peculiarly delicious richness. Kuse...not a negative image, but a positive image that goes one step beyond individuality. It is an attractive, one-of-a-kind sake.

While I have been accumulating points at Nakano's Azino Machidaya, I have not had many opportunities to use them, so today I used my points to buy Tobiroki, which I do not usually drink very often. Years ago, I used to actively try to buy it whenever I had a chance to buy it, but recently I have been mainly interested in sake from Tokyo and Kanagawa, so my interest in this brand has been waning. Melon type Kamitachika. I wonder if it tastes like this? The taste is...I don't know...alcoholic and hot in the mouth. At first a little sweetness and acidity spread, but soon a burning heat spreads in the mouth. I was wondering if it was like this before...? I wondered. Wasn't it more like water?

Shoryu Hourai Kimoto Junmai. It has a sweet aroma of grains mixed with a fresh cucumber aroma. The taste has a sweetness reminiscent of melon and acidity typical of a sake brewed using the "kamoto" method, and the powerful umami of the sake spreads with a strong bubbling sensation. It is different from Zanzou Horai in terms of strength and full of umami. When there are both, it is hard to decide which one to buy. It is good when I can afford to buy both.

My favorite Junmai Ginjo Yamadanishiki from Kimasa. There was a tasting and sale at Aji-no-Machidaya, and I was given an oinokuchi (small sake cup) with my purchase. Akikawa's sculpin is cute. The aroma has a tangy alcohol flavor. The flavor is well balanced and the umami is robust, making it enjoyable as a stand-alone sake or as a food sake. The slightly ugly sculpin is also charming.

Dewa Sanzan by Zanso Hourai. My favorite bottle. It has a fresh sweet aroma like LaFrance. Unlike LaFrance, the taste is that of a refined Japanese pear with a deep and elegant flavor. It has a richness like tanned leather and is really delicious. You don't know when to stop.
