Transparent with a slight yellowish tinge. The full aroma is reminiscent of cotton candy and rice. The aroma is extremely weak. Smooth mouthfeel. Soft acetic acidity. After rolling around in the mouth for a long time, astringency and umami eventually appear. It has a medium lingering aftertaste with hints of golden sugar. It is a light mellow sake that tends to be more like a refreshing sake.

I immediately warmed it up, and the aroma, which had been quiet earlier, rose, and the flavor became fuller. The aroma, which had been quiet earlier, was more lively, and the flavor was fuller.

On the fourth day after opening the bottle, I tried heating it up, but the flavor lacked fullness and breadth. It was not good. It seems that this sake is made to be drunk quickly at a high temperature.

The brewery is located in Toyama Prefecture, but it seems to have been severely damaged, so we drank and cheered. Rice is Shunyo and Yuyamanishiki. Yeast: Kanazawa yeast Muscat flavor common to sake made with Shunyo. Slightly white wine-like 🤔. I felt the slightly stronger bitterness and alu-ness at the end accented the taste.

Good evening, bouken😄. I like your support by drinking 👍. I've never seen a sake with koji rice Oyamanishiki and kake rice Shunyo 😳. I haven't smelled 4MP of Shunyo sake for a long time, so I can't wait to open my long-stored Yamazan no Kotobuki Freaks 2 😌.

Good morning Aladdin 😃 I had an image of 4MP alcohol as low alcohol, but this one is 17 degrees, so it's fresh and bold 😊. Freaks 2 has been on my mind for a while too 😁.

Today's sake is also a continuation of yesterday's sake, Ariiso Akebono, which survived the earthquake in Himi 😀 Yesterday's was a draft sake, but today it is a fire-brewed junmai-shu. Yesterday it was a draft, but today it is a fire-aged junmai sake 😀. Of course, we will be comparing the two sakes we opened yesterday, Ariiso Akebono and Nitoshi 😀. Kaorin is separated from us again today, so we started the laboratory with 3 bottles side by side 😀. With a wife, you can't play this kind of game very often 🤣. At first I had them in hiya 😀. As I thought, I liked the Ni-Utsuri's raw taste the best because it has a firm sweetness and umami flavor 😀. The taste of Aiso Akebono was almost the same between the raw and the hiya 😀. Then...I roasted 3 bottles at once in hot water up to 40 degrees Celsius 😀. Unfortunately, Ni-Rabbit... I knew before I tried it but the taste was too chunky and the hiya was not sharp and tasty... Sorry for experimenting just because I knew what I was doing: 🙇‍♀️ I'm sorry for the experiment, I just knew what I was getting into........ However, the raw one was getting a bit sour, so today's Ariiso Akebono was the best when it was heated 😀. This heated sake was delicious and I really hope the brewery will revive it soon 🙏.

Good evening, Yasube 😃Kaorin continue to take care of yourself 😌. Drinking Ariiso Akebono and cheering for it, good for you. ☺️ It's also very interesting how the flavor opens up differently when heated up between the raw and the heated versions 😊The two hares...everything is a challenge 😁.

Mr. Yasube. Good morning... I love the sake lab 🤣 It's a little bit luxurious to compare sake, isn't it? And it's not easy to open 3 kinds of sake at the same time!

Aladdin, thank you for your concern 😀. I'm a little more than happy to say that I finally managed to go a day without a fever 😀. I really felt bad for Ni-rabbit because I knew that before the experiment 😅. I'll make sure I end up with a proper hiya.

Mr. Yasube. Excuse me here as well. Yes, that's right. I think many small warehouses are structurally vulnerable to earthquakes. Himi, Niigata-Kashiwazaki, etc. also suffered damage. I hope everyone will come back!

Himi City, Toyama Prefecture The tragic Hokuriku earthquake has focused on Ishikawa prefecture, but Himi city in Toyama prefecture was also severely damaged 😭. This bottle is said to be one of the few remaining sake bottles from a brewery in Himi city where most of the bottles were broken 😅. It's a bottle with a lot of vitality 😀. I had it cold first, and this sake is unmistakably mellow 😀. Then we compared it with Fusashimaya's light nigorigo which we opened yesterday 😀 We drank it both hiya and lukewarm. The table top looked like a laboratory, but it turned out to be a delicious drinking comparison 😀. We were especially surprised at the change in taste of Ariiso Akebono's sake when it was heated from cold to warmed up 😀. It's tough when the wife is down, but it's fun to experiment with different types of sake 🤣.

Thank you all for your kind words of sympathy😊It's only the second day, so it's hard to get rid of the fever and I'm feeling lazy, but it's definitely better than yesterday. My husband is giving me a lot of trouble, but I'm glad to hear he's enjoying himself in his own way.

Schwarzwald and classy cherry pineapple. No bitterness at the pull, refreshing. After visiting Takamura Coffee, I decided to accompany bouken-san to his favorite restaurant, Haretoke, because it was within walking distance 👟. It is a special store of Kamigawa Taisetsu, and they had quite a variety of it. ❄️ It was a bit out of season, but we wanted to try a draft sake, so we chose this one. It was fresh and delicious ✨. Next time I want to buy a few different kinds to compare 💡. 720 mL ¥ 2,530

I had a good impression of the sake at the Takashimaya Sake Festival, so I bought it thinking that Haretoke had a bottle of nama-zake. After meeting up with Mr. Yoohee at the liquor store where we bought Ko-Imari, we went to another liquor store together and bought it. It has a gassy, citrus and muscat flavor. The overall impression is sharp and it finishes sharply. The date is January this year, but there is no problem with the taste at all. I have the impression that Haretke is safe to buy even if the date is old. Well, Hakuryu is also in Niigata, but it's confusing, isn't it?

It is brewed by a young brewer who used to work at Kuroryu. From this season, the responsible brewing will be separated from the regular products and will be available only to special distributors. For a moment, you may wonder what's going on. But after a short delay, the concentrated, juicy sweetness and umami taste arrives. I think it is rather refreshing. It may be a unique flavor. It is a very drinkable type of wine.

I thought I couldn't buy Iwanoi anymore since the Laox in Dotonbori closed, but recently I've seen on SNS that many new stores have started handling it. Are they doing a good job? Haretoke in my neighborhood started to carry it, so I bought it for the first time in a while. They have a variety of products, but I chose So no Mai. It is fruity but complex, with dryness and minerality. It also has a light gassy feeling. I had a similar experience with Iwanoi, but I wonder if the minerality is due to the use of ultra-hard water. I think the taste is unique and has no comparison. The higher the temperature, the stronger the taste becomes.

5.0 Juicy, full-bodied, with a moderate aroma, just the way I like it. There were about 6 different types of rice, but this Yamadanishiki was the most expensive, about 2500 yen for 4 cups. But the others were 1500 yen or so, so I will try them from now on!
