The brewery is located in Nara city but in the old village of Toki. It smells like ramune and muscat. The brewing style is based on Bodhi-gan, so the sourness and sweetness are impressive. The alcohol is low, so it is easy to drink. It is easy to drink because of the low alcohol content.
The sake is pressed on New Year's Day, and the liquor store picks it up and sells it on New Year's Day. Shinsei also does this, and the Risshun sake is similar. It has a fruity and light attack. It has a sweet taste like muscat or grapes. The overall impression is also quite light. At the end, it is quite dry.
I bought this after hearing a rumor that the label looked like a blade of demon destruction. It's definitely a yoke. Apparently the toji is a fan. It tastes really beautiful. It has a calm, gentle sweetness, astringency, and acidity, with a hint of calm. I felt like they were expressing the gentleness of Sumijiro, even the taste.

Honey-like sweetness. It's refreshing, but also slightly thicker? My impression is that it's rather unique. It's sweet, but not so much. It's a combination of modern and old-fashioned.
