The flavor is so delicious, it warms the stomach 😆.

A little before the end of the course, we had the Jyuwari Soba with a sprinkle of sea bream salt.
The accompanying sake was Tamagawa.

Served with the Kabako crab bun was an old Tasake sake, 1999BY😳.
It seems to be well preserved and has a clear flavor that doesn't taste like old sake. But. The gorgeous aroma and long aftertaste that comes through to the nose is the matured feeling of old sake.
I can't describe this deliciousness due to lack of vocabulary.

The 7th dish, Mehikari no Silk Wrapped Sushi, was served with a heated bottle of Tama Sakura. The mehikari was crispy and fluffy 😆 .
It was a nice complement to the gentle flavors of the dish, and not too assertive.
