Maybe it's not the usual Tasake Tokusyu Jun? It's yamahai.
Not much of a yamahai-like acidity or something? Is it different from right after opening the bottle because it's just about to end?
While the umami taste is well felt, there is a little bit of astringency mixed in.
The aftertaste is unexpectedly short and fades away quickly.
Since we have been drinking a lot of sweet sake, this is relatively suited for eating.
This is a delicious sake!
