I used to drink Koshi at a cooking ryokan in Iwai, Uchibo. I bought it at my favorite liquor store. I rarely buy sake from Chiba, but I found it to be well balanced and delicious. I used to drink only sake from the Tohoku region, but nowadays all sake breweries are at a higher level.

On the day of opening, it was very acidic and had a strong aroma, but after a week, the acid was gone and the aroma settled down and it tasted good. My wife said it tasted better on the opening day when the acidity was strong, but I prefer it if I wait a little longer after opening the package.

It's been a long time since I've had this Amaneko. I felt a strong aftertaste of lactobacillus and wondered if it was like this. After finishing it, I noticed an endorsement that said it would be finished after 3 years of storage 🥹. I had a preconceived image of Shinsei as a sake for early drinking, so I quickly opened it. Too bad 😢.

Akabu The third bottle is a junmai ginjo-shu brewed with Iwate sake rice Yunoka. It is cheap to drink and has a slight bitterness at the end. It was cheaper to drink and had a slight bitterness at the end, but I preferred it to Omachi. It was a good sake all made in Iwate. Since I had to work during the GW holiday, I enjoyed it slowly with a cup of Bajo Cup from Karatsu, Korea, which I bought during a GW touring trip about 25 years ago.

I bought a variety of different series of Akabu's sake brewing rice, so this time it was Omachi. It is a little more crisp than the previous Yamada-Nishiki. It is still a little sweet. It's delicious though. ....

Morishima's new product made with Hokkaido's sake brewing rice Comet. This is the first time for me to drink a sake made with Comet. It was sharp and elegant. It is said to be a test brew, so it is unknown if it will become a regular sake in the future.

First time drinking this sake. It's from Shimane, but it's fruity and very delicate. It is said that the sake brewery is related to former Prime Minister Takeshita. The sake cup to go with it is Fuminori Fukami's glossy sake cup.

Houou Mita after a long time. Fruity and dangerous sake that you should not drink too much of. It was a sake that made me think that the level of sake in the Kanto region has risen to a higher level. The sake cups to go with it were Okamoto Saku Rei's Tokutsu Tokuri and Gugumeumi (sake cups).

It has been a long time since I have had Tobiroki. Recently, I often drink Aizu's sake, but I really felt that Tobiroki is a very easy-to-drink sake as a food sake, without insisting on fruity or ginjo aroma in a good sense. It was delicious. I served it with Korean Karatsu and Kohiki sake cups.

New Year's sake is an original sake from Gonoi Sake Shop of Akebono Shuzo brewery in Aizu-Sakashita, my wife's family home. It is fruity and delicious. I would like to repeat this sake again. The sake bottle and sake cup were fired by a deceased friend.

Sake from Aizu-Sakashita in my wife's countryside. This is my first time to drink sake here. It is refreshing and fruity. I really felt that the level of Aizu sake is very high! I served it with Aizu horse sashimi, and I used Korean Karatsu and Kumotsuru for the sake cups.

Morishima is recommended by the owner of my favorite restaurant. It has a strong acidity and goes well with food sake. Sake from Ibaraki is also quite good 😀. The drink to go with it is Karatsu's Snake Scorpion Bajo Cup.

Compared to Sharaku from the same brewery, it is easier to drink as a food sake. The hard thing is that both Sharaku and Miyazumi are expensive these days😅. The sake cup and teacups were given to me by a friend of the potter.
