Today my friend brought me this sake. The last time we had this sake, it was served at Bon and on a government plane, but this time it is GOLD.
This time it was GOLD. It has a very strong umami flavor and is as delicious as a Junmai Daiginjo made from Yamadanishiki without any cloying taste.

Not knowing that the royal road was actually in brewed sake, I selected the Junmai. It tasted just as I expected, refreshing, piquant, moderately sweet, and delicious. We have had many kinds of Shinsei, but this one has a clean and crisp taste unlike any we have had before. The sweetness and sourness are moderate. I was surprised again at the depth of this type of Shinsei.

I was so impressed with s.tokyo, Ryo and the delicious local sake that I visited the brewery the other day. 3 different sake were available, but after tasting, I got this one because it was my wife's favorite.
Unlike my taste, it has no acidity and is very much a sake. It is a good sake to be paired with sashimi.
Sake has a wide range of tastes, and people's tastes really differ.

Hiraizumi飛囀 スパークリング

This is the first time I have bought a Jacket, Hiraizumi.
It is said to be fire-aged, but the second fermentation in the bottle makes it sparkling.
It is quite sweet with a sake degree of -41.0, but it is clean and crisp. Of course, the bubbles are strong.

This is my second Gagakuyo. I bought the label with spring-like pink letters. Opening the bottle makes a nice sound. It is a bit thick. The sweetness and acidity are less than those of the green letters. It has a nice sharpness, but it seems to linger on the tongue.
