I was so impressed with s.tokyo, Ryo and the delicious local sake that I visited the brewery the other day. 3 different sake were available, but after tasting, I got this one because it was my wife's favorite. Unlike my taste, it has no acidity and is very much a sake. It is a good sake to be paired with sashimi. Sake has a wide range of tastes, and people's tastes really differ.

A friend brought it to me. He said it is made from Seabass Regal barrels. It is golden in color and smooth. It is sweet and has a unique aroma.

Hiraizumi飛囀 スパークリング

This is the first time I have bought a Jacket, Hiraizumi. It is said to be fire-aged, but the second fermentation in the bottle makes it sparkling. It is quite sweet with a sake degree of -41.0, but it is clean and crisp. Of course, the bubbles are strong.

I know it's a little late, but I had the good fortune to purchase this sake in the New Year. It has the sweetness, acidity, and effervescence of a Shinmasa, but with a wonderful sharpness and is very tasty.

This is my second Gagakuyo. I bought the label with spring-like pink letters. Opening the bottle makes a nice sound. It is a bit thick. The sweetness and acidity are less than those of the green letters. It has a nice sharpness, but it seems to linger on the tongue.

This is my second Yonotori. Last time I didn't notice it because I didn't have much experience with Shinsei yet, but this is very tasty. The aroma, sweetness, and acidity are in a very pleasant balance, and the flavor is very deep. It is not easy to find, but if I have a chance, I would love to have it.

A friend of mine brought it to me. It is sold only in Niigata. It's a Yamada Nishiki, Junmai Daiginjo sake with a clean, smooth and fresh taste. It's delicious!

This is the second sake from Nakazawa Sake Brewery, following s.tokyo, and it is made from ALL Kanagawa and the yeast is from Kawazu-zakura. It has a soft, fresh aroma with just the right amount of sweetness and acidity.

This is another bottle of sake that I purchased when I visited the brewery the other day. This one has great balance too! It's not too sweet, but it's piquant and has some acidity. It has the same direction as the Zanzo Horai I drank first, and both are very tasty, but I think I prefer the Dewa Sanzang 60 now.

It has a golden color that has never been seen before. It has a very distinctive aroma and taste that has never been seen before. It is recommended to drink it at room temperature or lukewarmly heated, but I had it cold. I felt the breadth of the sake.

I was so impressed with the Zanzo Horai I had the other day that I visited the brewery. I am so lucky to have such a brewery in my hometown. This time, I tried the Shoryu Horai, which will be shipped tomorrow. It is a sharp sake with a low polish and a strong flavor, but the sweetness is moderate and it is sharp. It is brewed with Kimoto. It's delicious!

I got the Risshun morning pressing of Tenju, which was additionally recommended to me. It's tangy and refreshing, sweet but with less acidity and sharpness. It's delicious. With my current palate, I'd have to go with Senkou for the Risshun morning pressing.

I'm embarrassed to say that I didn't know that there was a brewery in Kanagawa that made such delicious sake. This brewery is located in Aiko County. It is a very aromatic and gorgeous sake with strong sweetness and acidity. I feel it is in the same vein as the Ashigara s.tokyo I had the other day. It is also close to Shinsei. Very delicious!

This is my first Risshun morning pressing. This time, I asked for Senkou. Freshly pressed yesterday, this is a once-a-year festival. It was my first time to try Senkou, and I was very impressed with the taste. It has a fresh aroma with just a hint of fizz, moderate sweetness, and a touch of acidity that comes through refreshingly. Looking forward to next year!
