It seems to be a top 3 tasting ranking sake🍶 at Nagaoka Station's Ponchukan, and is a Niigata-only sake. It is slightly dry and has a great fullness of flavor. After the umami and richness of the rice, it has a pleasantly refreshing aftertaste with some acidity. I drank it chilled this time, but it would be interesting to drink it at room temperature or warmed. By the way, today's entrée was a shark called "Kasame" that I caught myself.

The first sip has a fruity, fresh, green-apple-like aroma. It has a full-bodied sweetness, but the aftertaste is clean and balanced with a good balance of acidity, without the sweetness that is often associated with draft sake. It is a slightly dry sake that retains the characteristic nuances of Niigata sake🍶 with a firm rice flavor, and is very good as a mid-meal sake. 🙆🏻 Incidentally, I actually visited this brewery and bought this after touring the brewery. It seems that a new filtration system was introduced last year, which seems to have contributed to the refreshing taste.

It is said to be a standard sake for local people in Niigata, and is positioned like Hana-no-Mai "Tsu" in Hamamatsu. After the umami and slight sweetness of the rice on the palate, the slightly dry taste quickly fades away with the acidity. It is a regular sake, but it is clearly of a higher level, and has no quirks that make it a good match for anything. No wonder it has become a regular.

I bought it because it was a Junmai Daiginjo sparkling nigori sake, which is rare. The bottle was labeled with a warning to open the bottle (⚠️), so we nervously opened the bottle. First, I drank the top part of the bottle, which was close to the supernatant liquid, and found the sweetness and rich umami that can only be found in nama-shu, which was pleasantly balanced by the acidity, which was not too strong or weak, and the carbonation. However, as with the Meiho Akagi Special Junmai, there was no aftertaste or sharpness, and the impression was that it faded away in the latter half of the bottle. After drinking it for a while, the fullness of the flavor increases and the sense of clarity disappears when the bottle is turned to muddy it. The impression is quite different from the lackluster aftertaste of the "Meiho Akagi Special Junmai" sake, and I found it to be delicious from the first sip to the last.

This is a very rare sake that is sold only at the ropeway🚡 boarding area of Shosenkyo in Yamanashi Prefecture. It is named after the mountain of Shosenkyo, and also after a toji (master brewer) who actually existed and was a great drinker. It was actually bought after climbing this mountain, and it is even more impressive to drink it while looking at the pictures of the climb. ☺️ It has a fruity aroma and sweetness, while the umami and richness of the rice are still strong. The umami of the rice is still very strong, so it seems like it would go well with a side dish of stewed chicken meat, a specialty of Yamanashi. However, it is a little bit too much alcohol, and there is a slight acidic taste. Considering the price of 2,500 yen for a bottle of No. 4, I must say that it is a bit disappointing.

I bought this sake at the direct sales shop adjacent to Fujimi Onsen ♨️ where I stopped on my way back from climbing Mt. The day before, I had been recommended a sake from the Sei Sake Brewery at an izakaya, and my expectations were high because it is a local sake that rarely appears outside of the prefecture. ❗️ Moreover, I was excited to learn that it was made with Hitomebore rice, which is not sake rice, but regular rice. ☺️ ...The taste is very different from regular sake. The mouthfeel is refreshingly sweet like a soft drink, with a slight citrus acidity accompanied by a slight carbonation 🍊. However, there is no sharpness or fullness. It has no umami or volume, so if you pair it with a meal, you will most likely lose. If you are not a fan of sake, you may find it refreshing and easy to drink.
