It is said to be a standard sake for local people in Niigata, and is positioned like Hana-no-Mai "Tsu" in Hamamatsu.
After the umami and slight sweetness of the rice on the palate, the slightly dry taste quickly fades away with the acidity.
It is a regular sake, but it is clearly of a higher level, and has no quirks that make it a good match for anything.
No wonder it has become a regular.
