The mouthfeel is too clean and refreshing.
After that, the umami and acidity of the rice followed, but I felt like I was missing something.
(It is very possible that the Kutouryuu Hanagaki I drank before this was so rich that I felt it was lacking.)
Hokkaido sake has an image of being dry and smelling of sake, but it is very tasty with a smooth texture, rice flavor, and just the right amount of acidity.
