Slightly gentle sweetness. Gentle acidity and ginjo aroma are also gently but not unpleasant. A well-balanced sake. The aftertaste does not linger that long.

(Buy the label for the New Year. lol) It seems to be a kijo sake, but it is not too sweet, and has a refreshing finish with a sweetness that includes acidity typical of Senkou. Very easy to drink.
Sentori Retro: I think it has more acidity than Modern...I personally like Modern because it has some ginjo aroma. But of course Retro is also delicious!

SENKYO's Edo-style MODERN starts with a sourness that is typical of SENKYO, but quickly fades away, leaving a fresh grapefruit-like taste and bitterness on the finish. The word "Edo Bari" gave me a bad impression, but it was so easy to drink that it made me want to drink other retro and classic styles!
The mouthfeel is delicious, with no cloying taste! The freshness of the sake is well expressed, and it seems to be a middle-of-the-road sake that will not interfere with any dishes. As you continue drinking, the spiciness and the ginjo taste come out.

Be careful when opening the bottle as it is fizzy and foamy. After carefully opening and closing the bottle several times, the wine mixes in the bottle and becomes cloudy white and pure white like snow. Once you drink it, the fizzy feeling, moderate acidity, and refreshing taste with no peculiarities at all will keep you coming back for more (laugh). I would definitely drink this sake again!
Apple-like aroma, gorgeous sourness and gasiness on the palate, great freshness. Not too much sweetness, more fruity, and solidly delicious! I want to drink it again!
It has a smooth mouthfeel, a firm sweetness, almost no acidity, and a moderate alcohol content that finishes slowly. I think the alcohol is a little bit bothersome.
