The sweet and sour taste spreads in the mouth and the aroma of so-called "Yamahai" (mountain haku) passes through the nose. It has a sweetness, but the inside of the mouth is clean, and yet it is full-bodied, which is a strange sensation. It is a completely different vector from the sake I have had recently.
