Just the right amount of elegant fruitiness and a crisp, appetizing dryness. It is not too assertive, completely integrated, and very easy to drink. A delightful taste.
Fruity. Fresh apple-like aroma and easy-drinking mouthfeel. It closes a little tangy and crisp, so it goes well with meals for that reason. Both with Japanese and Western food.
The refreshing and unctuous fruity flavor belies the image of unfiltered, unpasteurized sake. It is a delicious and casual accompaniment to fashionable dishes.
After the Niimasa, we decided to go with something a little more reasonable. I had a classic image of the unfiltered, unfiltered, unfiltered sake I had drunk before, but this one was moderately fruity and tasted smooth and delicious. It is pleasantly refreshing, reasonably priced, and goes well with food, so I wanted to repeat the experience.
Before I get drunk. This is the second Shinsei in my life. Everything is perfectly elegant. Some people may find it lacking in taste, but this perfect balance may be the most peculiar thing about it. For some reason, I find myself saying, "Mmmm, that's good!
The flavor is firm, as is typical of honjozo. It has a clear, refreshing taste without being unpleasant. Perfectly suited for pairing with gibier. I didn't know there was such a chic and cool sake in Fushimi.
This sake has a lovely design with the echoes of the blue sky and freshness of the label. The mouthfeel is as fresh and lush as the label, and while it is somewhat floral, it goes well with food in a light and refreshing way.
Fushimi is of course a town of sake breweries, but the river runs through the town, and it is fun just to take a walk along the river, enjoying the view of the willow trees along the river and the ten-stone boats. Fujioka Sake Brewery is one of the larger sake breweries in Fushimi, but they make all of their sake by hand with the same care and attention to detail.
I also wanted to try the transparent bottle of Aozora.

This brewery has a nice 💓 bar where you can enjoy sake while looking at the brewing tanks through the glass. I visited there once before and enjoyed the sake tasting set 😊.

I see that Haneda Sake Brewery is located in Keihoku. It is not as well branded as its neighbor Tanba Sasayama, but I have the impression that it is a picturesque mountain village where good water, really tasty rice, and vegetables are grown. I had drunk it a few times at a store in Kyoto, but I didn't see it on the homepage, but I was told that it is distributed on a limited basis. I had an image of a stylish sake with a fruity, spicy, and refreshing flavor that is not too assertive and goes well with all kinds of food. I would like to drink many variations.
