When I feel the gasiness, I feel the bitterness more strongly, but this sake has a moderate bitterness and the sweetness and umami are stronger.

Seriously delicious!
Setsuwakamaru: Yamagata Prefecture's rice that Kei Tanaka does commercials for, and it does a great job as sake rice.
It has just the right balance of sweetness, acidity, and spiciness. I just opened the bottle and it's a limited edition sake, so I'll have to go buy another bottle!

As expected, Junmai Daiginjo made from Yamada Nishiki is delicious!
I can see why it is served in JAL's first class! But...
It's good, it's good!
But Yamada-Nishiki Junmai Daiginjos usually taste like this...
In short, it tastes like a Yamadanishiki Junmai Daiginjo! 👍
If I had to say something, I'd say it's got some character...
