Sawaya Matsumoto Moribashira, which was opened last week, is served cold. The carbonation is gone, the sweetness and acidity are strong, and it finishes with the bitterness of alcohol. The sweetness was stronger when the bottle was opened. The impression was that it was an aperitif, but it can also be served as an in-between-dinner drink. I served it with grilled eringi mushrooms, and the balance of flavors I felt when I drank it was wonderful.
