W Senbon-Nishiki Unfiltered Nama Sake Sake Brewer: Watanabe Shuzoten, Hida Furukawa-cho Rice:Sembonshiki produced in Hiroshima Rice polishing ratio: 50 Sake meter: -3 Alcohol content: 17 Senbon-Nishiki was produced by fathering Yamada-Nishiki over a period of about 10 years on the premise that it would be produced in Hiroshima. It is a sake that deserves to be called "Nada no Nama no Nama Ippon". What happens when such Senbon-Nishiki becomes W? ...... Well, well, again, it has become a great sake with no defects. It has a deep and rich flavor that spreads as soon as you put it in your mouth. I can't help but drink other Senbon-Nishiki. Chilled to a crisp, its flavor is deep, and as it approaches room temperature, it becomes more mellow and expansive. The great thing about W is that it accentuates the characteristics and character of the rice in a positive way. Dublue, Akita Sake Komachi Reminiscent of elegant Akita Bijin (This is just my personal impression. I am sorry if anyone is offended.) It is a sake. There is not much of an aroma that can be felt through the nostrils, but when you put it in your mouth, it has an overwhelmingly gentle but full aroma. It is a sweet sake. What, it's not dry? If you think so, please try it. I think it transcends sweet and dry. Since it is the Boys' Festival, we decided to make it an iris sake. Hourai Ikusei Handmade Junmai Hidahomare Sake Brewer : Hida Furukawa Watanabe Shuzoten Rice:Hida Homare Rice polishing ratio: 60 Alcohol percentage: 15 Watanabe Shuzoten knows Hida Homare very well. It does not have the "limpness" of Hida Homare that is sometimes found in other Hida Homare. The rice polishing ratio seems to be less than 60. It is like a daiginjo-style cold sake, but it does not fall apart when heated. Thanks to the brewer!

Kariho Junmai Shu Kazeho Akita Seishu Co. Ingredient rice Miyamanishiki/Ginsan Polishing ratio 60 Alcohol percentage 15.0-15.9%. Sake Degree +5 Acidity 1.5 Long time no see, Akita sake. So refreshing and easy to drink! It has a good taste of rice, and considering the price, the performance is sufficient. I would recommend drinking it lukewarm, or even sun-warmed, to finish it off.

Yamagata Prefecture Koikawa Shuzo 100% Yamagata rice Rice polishing ratio 65 Alcohol content 15 Sake Degree +6 Total acidity 1.6 Amino acidity 1.3 Dry, with a clean aftertaste. Warmed sake gives fullness to the flavor. It is good for home-drinking evening drinks because it is cosy and does not interfere with food. But I wouldn't buy it in a row.

Alcohol 16 degrees The name of the brewer is written on the label. I wonder if it is a work of confidence. As is typical of Hidahomare, there is no extra aroma, and it is well balanced and easy to drink. I wonder if the water is good. Sake Brewer : Gifu Kakamigahara Hayashi Honten Rice : AICHI NO KAORI (edible rice) Polishing ratio : 60 Sake degree : +3 Acidity : 2.0 Alcohol content : 15 A bottle I bought for the New Year's holiday (the three-day weekend has long passed). This sake is made from "Aichi no Kaori", a local rice. The rice I eat all the time is also "Aichi Kaori". I was amazed at how much can be done with food rice. The aroma of white peaches, oranges, and apples, with a hint of something I don't remember. It's a very sour sake with a lot of character. To be honest, it may be difficult to match with Japanese cuisine. Sake Brewer : Hida Furukawa Watanabe Shuzo Principle rice :Koshinozuku Fermentation : M310 Rice polishing ratio : 54.6 Alcohol content:17.1 Sake content: -2 Acidity: 1.3 Amino Acid: 0.8 Glucose: 1.8 Koshinoshizuku was created by crossing Kitanishiki and Miyamanishiki in Fukui in 1988. Fukui is known for its Gohyakumangoku, but unlike its clear outline, it has a slightly complex flavor. The aroma is not very strong, but it is elegant and fruity. The throat is light, and the aroma is light and fluffy. The aftertaste is refreshing even though it is so thick! I'm not sure if this is a good thing or not. I've been drinking this sake since New Year's Eve, and it's made a huge impact on me. I'm looking forward to seeing what happens to the Koshi no Shizuku when it's not a W. Sake Brewer Nagano Marusei Shuzoten co.ltd The raw material rice Hitoguchi from Nagano prefecture 90%.      10% Hime no Mochi from Shinano-machi Nagano Prefecture Alcohol content 15%. It has a sweet taste like Nagano sake (or is it just my personal opinion?). But it's not sweet, it's refreshing. It has a fruity taste, which is different from wine, and you can feel the softness and the flavor of the rice. The acidity is perfect, and the sake is very well balanced. Warming the sake makes it richer in flavor, and even though it is sweet, you will never get tired of drinking it. It's on the edge of my budget for dinner, but it's the end of the year, so...

Clear and dry. It looks like a good sake. If this was submitted to a rating check, many people might mistake it for a high quality ginjo-shu... You can really feel the Gohyakumangoku. Is it a light dry style? It has a smooth taste of rice and a soft texture. The aftertaste is refreshing. It's a hiyaoroshi with a lot of flavor. The cost is super duper great!

Manufactured by Tajirmai Gomei Kaisha, Tajima City, Hyogo Prefecture Rice used: Dontonkoi rice produced in Hyogo Polishing ratio 70% polished rice Alcohol content 14 Sake degree +14 Edible Dontokoi rice is used. It is refreshing and easy to drink without being cheesy. It has a bit of an old-fashioned feel to it, but I think the low alcohol content is a good thing. It's a great addition to your daily nightcap. And of course it's great with warmed sake too!

Hourai Publication memorial sake Sake Brewer : Hida Furukawa Watanabe Shuzo Rice type Bizen Omachi Polishing ratio 55 I won a present to commemorate the publication of "The day sake surpasses wine" written by the president of the brewery Watanabe. Wine and sake are two completely different alcoholic beverages, but they are equally fruity, fragrant and full of flavor. Manufacturer: Furokui Sake Brewery, Yamagata Prefecture Ingredients Rice, Rice malt Alcohol content 18 degrees Raw rice: Haenuki Rice polishing ratio 55 Yeast used: Yamagata yeast Sake content +6 Acidity 1.8 This sake has no extra aroma (I like ginjo aroma, but I don't think it's necessary) and feels light and smooth. It is easy to drink, even warmed up, without losing its flavor. I wonder if "Haenuki" is the same as the rice it's served with. I don't know much about it, but it's good enough for sake rice. I think it's a good choice for evening drinking. You don't feel the 18% alcohol content, and you can drink it easily. When you notice it, it's like, "Huh?
