Sake Brewer : Hida Furukawa Watanabe Shuzo Principle rice :Koshinozuku Fermentation : M310 Rice polishing ratio : 54.6 Alcohol content:17.1 Sake content: -2 Acidity: 1.3 Amino Acid: 0.8 Glucose: 1.8 Koshinoshizuku was created by crossing Kitanishiki and Miyamanishiki in Fukui in 1988. Fukui is known for its Gohyakumangoku, but unlike its clear outline, it has a slightly complex flavor. The aroma is not very strong, but it is elegant and fruity. The throat is light, and the aroma is light and fluffy. The aftertaste is refreshing even though it is so thick! I'm not sure if this is a good thing or not. I've been drinking this sake since New Year's Eve, and it's made a huge impact on me. I'm looking forward to seeing what happens to the Koshi no Shizuku when it's not a W.
