eda-p Sake Brewer : Gifu Kakamigahara Hayashi Honten Rice : AICHI NO KAORI (edible rice) Polishing ratio : 60 Sake degree : +3 Acidity : 2.0 Alcohol content : 15 A bottle I bought for the New Year's holiday (the three-day weekend has long passed). This sake is made from "Aichi no Kaori", a local rice. The rice I eat all the time is also "Aichi Kaori". I was amazed at how much can be done with food rice. The aroma of white peaches, oranges, and apples, with a hint of something I don't remember. It's a very sour sake with a lot of character. To be honest, it may be difficult to match with Japanese cuisine.
