What does summer taste like? I wonder what makes it feel like summer, but even if I can't verbalize it, drinking this reminds me of summer. Sourness and bitterness move around on the tongue, and if you swallow it down your throat with air, the bitterness behind the sourness of the lemon and the somewhat sludgy, caramel-like sweetness will spread in your mouth and pass through your nostrils. It is described as lemon squash, but that is because there are too few things that can describe it. It tastes complex and elegant, with the freshness of a green apple like a white wine. In other words, I like it. It gets hot, I take off my clothes and feel summer.

When I tried to open the bottle, the cork was released by gas on its own. The aroma is of sake with a strong alcohol taste. When poured, the gaseous sensation is as strong as carbonation, and the anticipation is high. When you put it in your mouth, you feel the tingling sensation of gas moving around on your tongue. While feeling the freshness, what comes next is a bitterness that is felt at the back and sides of the tongue. Then, after a delay, the umami sweetness of the rice spreads. The lingering bitterness then lingers in the mouth. It is hard rather than smooth. It tastes like white wine (stupid tongue). It is good for sipping and savoring.

It is very light and easy to drink, thanks to its 13% alcohol content. A light sweetness spreads on the palate, followed by the flavor of Akabu's character. Perhaps it is the preconception of its appearance, but it has a somewhat cider-like sweetness that gives it a summery feel. Very tasty. I like it.

It is said to have an apple-like flavor. The very juicy fruitiness was refreshingly sweet and very drinkable to my liking. I would like to drink it again, just like summer.

Very easy to drink. Like a drop of water, with a ton of gentle sweetness on the palate. Like a green tropical. The first touch is soft and the bitterness does a nice job of enhancing the sweetness in the final finish. Very likeable.

When I opened the bottle last week, I thought it was just a normal tasty sake with an Akabu character, but I was surprised that it still had a freshness to it. It doesn't feel oxidized at all, but has a different calmness than when I opened it. If anything, I think it tastes better now. Smooth, elegant sweetness and Akabu-ness, wonderful.

Is this Aizan? I thought. It has a unique and spicy aroma, not sweetness. I like both Kaze no Mori and Aizan, but this is something else. It is not the same as liking them, but a different vector of existence.

A thick cloud of sweetness and flavor (like a cumulonimbus cloud, soft but firm and weighty) spreads out and stays spread out. Elegant. It is not sweet, but rather calm, and does not seem to have a firm outline. I feel that the fruity flavor that is typical of Akabu is locked in to the maximum extent possible. It may be the aroma of the Yui, or it is a vector similar to that of Aizan. The texture is of course smooth. In my layman's opinion, it has the same vector as Akabu Aizan, but the absolute value is thicker and more extended. The difference in price was not apparent to me. Too bad.

I bought it because it was one of the products that my friend swamped me with sake. The aroma upon opening the seal was sweet, reminiscent of Akabu's Aizan. It has a smooth mouthfeel with no gassiness. In the mouth, the sweetness was similar to that of Akabu's Aizan at the moment, but after that, it was completely different. As it passed down the throat, the sweetness remained, but the bitterness spread wriggly from the back of the tongue and passed into the nose. In between, the sweet flavor and the bitterness on the tongue mixed together to create a complex taste experience. The lingering taste is strongly bitter. Personally, I believe that this bitterness is what Yamada-Nishiki is all about, so I felt that it enhances the sweetness while taking advantage of the characteristics of the rice, creating a complex and interesting flavor. I would rather drink it with something to accompany it than by itself. (If there is anything that can describe this sweetness, I would like to know.)

It tastes similar to Akabu's Aizan. It has the gasiness and tanginess that only nama-shu can bring to the tongue, and the flavor spreads at once, but the first touch also rises firmly, and the sweetness, almost tropical? The first touch is also firm, and a sweetness similar to that of tropical (lack of vocabulary makes me sad at times like this) spreads explosively. The lingering aftertaste is a gradual loss of the spreading sweetness, and finally, a flurry of alcohol. I had an image of OMACHI as having a delicious flavor that lies dormant in its transparency, but this overturned my image as a shallow newcomer. Just by changing the way you drink it, you can change its color and enjoy it. Thank you, Mr. Akatake.

The first touch is gentle, with umami and bitterness spreading to the palate. The clearness is typical of Omachi, but the weight of bitterness remains. I personally dislike dry or alcoholic bitterness, so this was disappointing. I would like to state that this does not mean that it is bad.

What is sake? The cheerful sweetness and young, popping gasiness that spread across the palate. It may be inappropriate, but my first impression was that it was like cider. From there, the drink cuts right through and is very clear, with no bitterness peculiar to alcohol. My friend said it was like sake, but for me it was not sake. It is a gem that I would rather drink in large gulps than sip and sip. In short, I like it.

Gentle and soft spring-like sake, including preconceived notions. The first touch is soft and the umami spreads later. The lingering aftertaste is clear and easy to drink. My favorite. Rather than being rich, this is an excellent sake to be drunk slowly and gently.

I drank Kuheiji at Kuheiji. I have only tasted Omachi with Genmai, but I see, the aroma oozing from deep within the clear middle and the gentle aftertaste made me think this was Omachi. I love it.
