I bought it because it was one of the products that my friend swamped me with sake.
The aroma upon opening the seal was sweet, reminiscent of Akabu's Aizan. It has a smooth mouthfeel with no gassiness. In the mouth, the sweetness was similar to that of Akabu's Aizan at the moment, but after that, it was completely different. As it passed down the throat, the sweetness remained, but the bitterness spread wriggly from the back of the tongue and passed into the nose. In between, the sweet flavor and the bitterness on the tongue mixed together to create a complex taste experience. The lingering taste is strongly bitter.
Personally, I believe that this bitterness is what Yamada-Nishiki is all about, so I felt that it enhances the sweetness while taking advantage of the characteristics of the rice, creating a complex and interesting flavor.
I would rather drink it with something to accompany it than by itself.
