I super love it. The words stuck in a room alone. The corners of my mouth turned up involuntarily. When the bottle was opened, it was scented with a strange aroma. The moment you put it in your mouth, the gas swish rolled on your tongue. The sweetness that spreads rapidly on the back of the tongue and in the nose. Fruit. Is this Aisan? When the sweetness rapidly disappears, the bitterness that is typical of Akabu comes gradually afterward. The aftertaste is so soft, however, that it makes you want that sweetness and bring the glass to your mouth again. I like it very much.

Akabu was recommended to me by a friend from Iwate. The umami, aroma, and bitterness spread in linear proportion with time. The taste is gentle and smooth. Not many flavors show themselves, but it is very straightforward. More umami than dry. The bitterness is slightly stronger than the sweetness, but the bitterness in the aftertaste turns to sweetness and makes you unconsciously reach for it. I like it.

Gin-no-Iroha is made from Miyagi Prefecture's sake brewing quality rice. The first touch is sweet, then the mouth is filled with indescribable umami and white acidity. It is quite violent. It is a pity that I am not knowledgeable enough to describe it. The lingering finish leaves a sake-like sourness and a slight bitterness in the mouth and on the tongue. The change in flavor over time is interesting, and I personally like it. It can be sipped even without any accompaniments.

On its own, it was smooth on the palate, leaving a bitter aftertaste. Personally, it was not my favorite. With fish, the bitterness was a nice complement to the fish, and this was a good choice. When heated, the bitterness became even stronger.

I was able to get it for 3,500 yen per batch. It may be a preconceived notion, but it has a rainbow of colors and tastes. When served cold, there is little bitterness in the aftertaste, but it is not monotonous and has a deep, rich flavor. If you drink it at room temperature, it has a bitter aftertaste, but even that is a taste. I don't need any snacks, I just want to keep on drinking it. I had set a high bar for this sake because of its rarity, but it has surpassed it with ease. (Speak too soon).

Pineapple. Pineapple in the attack and then comes another attack of pineapple. Even the aftertaste is a pineapple bitterness that remains in the sustain. There is a rather strong alcohol strength, but not much of the miscellaneous bitterness. Delicious.

I don't know if this is what a noble sake is supposed to be like. Melon-like sweetness attacks, and the sweetness and umami linger in the aftertaste. The aftertaste leaves a bitter taste of alcohol on the palate. It is so easy to drink that you end up drinking it all the time because there is no alcohol feeling at the moment of drinking. Is it a food wine? It is more like a dessert wine.

Even though it is a daiginjo, it has a swollen umami and depth of flavor that sets it apart from others. You can drink it all the time.
