A collaboration between Abe & Tatsumi Seishukudo! The color is lightly cloudy and there is some oriki involved. When opening the crown, the bottle must be opened several times or it will spill! The aroma also has a refreshing sweetness unique to Abé, and in the mouth it is light and champagne-like due to the sparkling nature of the wine. This is delicious for going above the usual shwashiness 😋.

Dawn of the Young 2024 Its 1️⃣ 5️⃣ From the website Nusamai is a regular sake in the Goshiki Saiun series, available year-round. Using classical techniques that utilize natural bacteria, Nusamai is made from Hokkaido rice and fermented in Hokkaido's climate to bring out the local flavor. It is characterized by a breadth and depth of flavor that differs from that of a fast brewing yeast, and we are conscious of a broad approach to modern eating habits. Since the region has a long cold period, we have also taken into consideration the design for heating sake, allowing it to be enjoyed slowly in lukewarm temperatures. The name Nusamai comes from the Nusamai Bridge, a bridge that spans the lowest reaches of the Kushiro River, a first-class river that flows through eastern Hokkaido and empties into the Pacific Ocean. The name comes from the Ainu word "nusa-o-mai," meaning "the place where the mint is located. The nusa-o-mai is the place where the inau (wooden staffs) are erected and lined up to worship the gods and perform rituals.

The name was chosen because white koji has only recently begun to be used in sake production, and it is a new technology. Ashiㇼpa in Golden Kamuy Asiㇼpa is an Ainu girl who appears as a heroine in Golden Kamuy. She describes herself as "an Ainu woman of a new era," and her name comes from ashiㇼ (new) pa (year).

Kobayashi Brewery brewed this sake with Yamada Nishiki grown at Kato Farm in Ashibetsu. It has a beautiful quality that is typical of Yamada-Nishiki. Choro Young Dawn 2024 Its 8️⃣ From the website What is S.tokyo... The yeast used by S.tokyo is a sake yeast called Saccharomyces tokyo NAKAZAWA. This sake yeast was discovered in 1909 by Dr. Ryoji Nakazawa, a doctor of agriculture. It is the second oldest sake yeast in existence, but it has never been used in sake brewing.
