Tenryohai Ichidotsu no Bliss is a premium daiginjo sake produced by Tenryohai Shuzo on Sado Island, Niigata. The sake is made by carefully polishing 40% Koshitanrei sake rice grown on Sado Island, and is characterized by a mellow, elegant aroma like that of pears that rises softly from the moment it is poured into the glass. In the mouth, the clear, crisp taste of the rice spreads through the clear, crisp flavor, and the luxurious taste is truly deserving of the name "a drop of bliss. I brought a bottle of this precious wine that I received as a gift from a friend, and was thrilled to have it signed by the brewer, Senichi Katoh himself...! ✨ In addition to the delicious sake, it was a special and memorable experience. 🍶💛

Happy Taro's "Uki Uki Pop"! The "Uki Uki Pop" we received this time was a cheerful and fun doburoku that, as its name suggests, made us feel excited the moment we drank it✨. The first thing that spreads in the mouth is a pleasant sourness that pops with a "sizzle". The balance of the gentle sweetness that follows is exquisite, and the taste is light yet satisfying. While the mild rice flavor characteristic of doburoku can be felt, the overall finish is refreshing and easy to drink, making it a truly delicious bottle 💕💕. As the name suggests, it was an "Uki Uki Pop" that even brightened my spirits! 🍶✨

Takagaki Junmai Sake The "Takagaki Junmai-shu" we were served this time had an appealing "gentle richness" that you could feel the moment you took a sip. The initial impression was mellow, with a full-bodied rice flavor that gradually spread across the palate. The taste is neither too heavy nor too light, but has an exquisite balance with the depth and calmness typical of junmai sake. The more you drink, the more the rich umami of the rice can be felt, and the more you drink, the gentler and more reassuring the finish is. It was the type of junmai sake that is easy to pair with meals, and the longer you savor it, the more delicious it becomes 🍶✨.

Mimuro Sugi Fest Miwa Lore Storehouse Birthday Festival Three limited edition sakes were brewed to commemorate the opening of the Miwa Denso Kura. The last bottle was-- Prelude to Miwa Densetsu Kura Kurazekura yeast test brew This sake is the result of a very interesting challenge: brewing with "only brewer's yeast" in a new brewery. The character of the yeast itself could be felt more directly, and the refined taste typical of Mimuro-Sugi had a depth of potential that had yet to be discovered. The balance between freshness and soft umami was good, and the "taste with a sense of the future" that only a test brew like this can produce was very appealing and delicious 🍶✨.

The second sake we had was.., Miimorosugi Bodaiyasugi Yamadanishiki Unfiltered Nama-Nishiki Unrefined Unblended Sake Orikagarami Miwa Densetsu Kura Birthday Sake (Commemorative Sake) The flavor of Yamadanishiki is combined with the acidic nuance of Bodaihashiro, and the "orikara" (orikara) adds a gentle mellowness and thickness to the flavor. It has a freshness typical of unfiltered, unpasteurized sake, with a pleasant umami that spreads out as soon as you drink it, making it a very delicious bottle 🍶✨. It was a fun limited edition sake with a different look from the first glass, and was fun to compare!

The first one we had was The first one was the "Miwa Denso Kura Birthday Sake (commemorative sake)" brewed in a wooden cask with a mixed brewing process. The brewing process is a "crystallization of time and effort," with the use of Bodai yeast yeast, wooden vat brewing, and a mixed brewing process. The aroma is mild, but the acidity characteristic of the Bodai yeast and the soft flavor of the wooden vat combine to give this bottle the depth that only a traditional brewery can provide. It was a truly delicious sake with a gradually spreading umami flavor and a warmth that only handcrafted sake can provide 🍶✨.

Kinjaku, Flying This is a really precious bottle too, and we are happy to receive it: ☺️ Comment from the brewer This Junmai Daiginjo is made by carefully polishing the finest Yamadanishiki and brewing it with clear spring water from the headwaters of the Nishiki River. After slow fermentation at a low temperature, the sake is hung in a sake bag and only the natural drops are collected. When I drank it myself, it stood out for its clarity and gorgeousness without any cloying flavors, and I could feel the elegant sweetness that is typical of Kinjaku. It was a taste worthy of the name "Hisho" (flight), and suitable for a special occasion 🍶✨.

Shinsei Tangerine is still delicious! I was really happy to be able to drink it this time, as it was one I couldn't easily buy myself: ☺️ The softness in the mouth and the unique world view of Fukunohana's umami spreading quickly... the fire-brewed "Colors" series of Shinsei is very special. We received a special collaboration sake between Yuki no Bijin x Raden! This is another rare and precious bottle, and I was excited from the moment the bottle was opened. We were served Hana-no-Kou 9, a junmai sake brewed by Hana-no-Kou Shuzo using Kumamoto's native yeast No. 9. Unlike the usual Hana-no-Ko, this sake had a crisp "hardness" and a delicate yet core impression, with a clear aroma typical of No. 9 yeast, and was brewed to the exact specifications for the competition. It was a rare opportunity to experience such a special sake, so I sipped each cup carefully, savoring every sip. I am very happy to have had the opportunity to experience these precious sakes. ☺️

We received a bottle of "Sato Ubei" from Shinmasa Sake Brewery! It is a very special sake that is rarely seen, and the moment it is poured into a glass, it is already filled with a sense of "preciousness" and "gratitude. It is truly a once-in-a-lifetime experience. The aroma is elegant and deep, with a sense of transparency that is typical of Shinmasa, while the taste is calm. In the mouth, it has a beautiful taste with both delicacy and depth, and the umami of the rice and lingering aftertaste are superb. It has a somewhat serene and dignified appearance, and is a sake that seems to be the liquid expression of the brewer's thoughts. It was a miracle to have this bottle, but when I actually tried it, I was even more impressed than it was worth. It was truly delicious and made me want to savor it as if chewing it slowly for a "special time" 😊.

The cocktail series concludes with the Yonotori x Sakura Wood🌸. It was particularly gentle among the woody types this time, with a fluffy aroma that harmonized beautifully with the gentle sweetness of the Yonotori. The nuance of cherry wood was subtle, with a soft aroma reminiscent of spring air. All of the woody varieties were modest in terms of impact, but I think they were there to enhance the original beauty of the Yonotori. In the mouth, in addition to the aroma derived from the wooden vat, an elegant mellowness unique to cherry wood was added, and it lingered pleasantly until the aftertaste. Although not flashy, the gentle taste that gradually permeates the palate is unintentionally enchanting. Through the Wood Series, I was reminded once again of the depth of Yonotori, with each type of wood showing a different expression. It was a moist drink that was a perfect ending to the series 🌸.

Next up was the "Yonotori x Chestnut Wood" 🌰✨. Among the wood series this time, this combination gave me a particularly soft impression. The gentle aroma derived from chestnut wood was added slightly and blended naturally with the wood vat-derived aroma of the Yonotori. To be honest, due to the time involved, we could not detect any major flavor changes, but even so, a slight roundness appeared on the palate, creating a gentle and pleasant taste. It is difficult to detect differences in aroma depending on the type of wood, but the chestnut wood had a softness that enveloped the entire flavor, and it seemed to enhance rather than detract from the elegant sweetness and acidity of the Yonotori 😋. Comparing the drinks in this way, it was a very interesting experience to see how the individuality of the wood and the subtlety of the sake overlap.

Next up was the Yonotori x Matcha 🍵✨. From the outside, this drink had an outstanding impact! The combination of matcha adds a nice astringency to the refined sweetness of the Yonotori, giving it a luxurious taste as if you were enjoying Japanese sweets and sake together. The color is quite dark and the matcha has a strong presence, but the drink is surprisingly refreshing and has a perfect balance of sweetness and bitterness 😋. The thick texture of the Yonotori softly blended with the matcha aroma, giving it a deep Japanese flavor. It was as if I was sipping an adult matcha sweet, and I discovered something new with every sip 🐤🍶. The pairing was unique, yet complemented each other to a high degree of perfection. It was a drink that reminded me once again of the depth of creative sake 🌿.

Next up is the "Flax Cat x Elderflower" combination 💐✨. The glass is garnished with edible flowers, and from the outside, this is a gorgeous and heartwarming drink. The light golden liquid with the colors of the flowers is as beautiful as a spring flower garden. The elegant and floral aroma unique to elderflower blends beautifully with the lactic acid-derived acidity and soft sweetness of flax cat, creating a refreshing impression that spreads softly in the mouth. It is light and easy to drink, but the alcohol content is actually a little high. The gap between the two makes it a "tasty and dangerous" sake that can catch you off guard 💦. As you continue drinking, the delicate acidity of the flax cat and the floral aroma blend together, leaving a gentle aftertaste. It was a drink that was a true work of art in terms of sight, aroma, and taste 🌸.

Next up is the Yonodori x American White Oak pairing🪵✨. We added a stick of American White Oak to the Yonodori for flavor. Originally, Yonotori has the mellowness and sweetness that only a wooden vat brewing can provide, but the addition of white oak changes the direction of the aroma. The aroma is distinctly woodier than Mizunara oak, with a mellow aroma reminiscent of vanilla. As time goes by, the aroma becomes more familiar, and a slight oaky and rounded feeling is added to the palate. The wood components blend well together, enhancing the gentle sweetness of the Yonotori, but also making the overall impression much tighter. It was as if the sake had been aged in whiskey barrels, a nuance that gave the sake a new look. The strong and fragrant aroma, which is different from that of Mizunara, is impressive, and it is hard to say which is better 😋. It was a very interesting experience to compare the drinks and rediscover the individuality of each wood and the depth of Yonotori 🍶.

Next up was the "Yonotori x Mizunara" pairing experience 🪵✨. Originally, Yonotori has a soft woody aroma derived from the wooden vat brewing process, and we added a stick of mizunara oak to flavor it further. The woody, gentle aroma unique to mizunara gradually melts into the sake over time, giving it more depth of flavor. The first sip accentuates the balance of Yonotori's inherent sweetness and acidity, and as the second half of the sip progresses, the fragrance of mizunara gradually spreads, adding calmness and depth to the overall flavor. The way the aroma transfers is never too strong, adding an elegant nuance like that of barrel-aged sake, and the lingering finish is very pleasant. The more you drink, the more mellow it becomes, and the more you enjoy the changes in flavor, which is another charm of this pairing. The warmth of the wood and the quietness of the sake. Again, it was very delicious 😋🍶.

The next one I got was Yonotori x Coffee Bean ☕️✨ The bitterness of the coffee beans nestled in the sweetness of the kijoshu, making it taste like a sweet and bitter dessert. Not only was it sweet, but the addition of the coffee flavor gave it depth and made it a much more mature drink 😋. I think a lot of people will be addicted to this! I was reminded once again of the depth of Yonotori's nostalgia.
