Lots of umami and mushroom on the nose. Soft texture, flavor of light melon, pear, and rather intense pepper on the finish. Alcohol and pepper carry on for a while.

Rice polishing ratio 70%, ALC 18%.
There is not much aroma.
When you put it in your mouth, you can lightly feel the unique "shuwashu" (a kind of "shuwashu" in Japanese sake), and you can also taste a slightly fruity flavor.

Exactly as the label says, young and fierce.
Centrifugal separation, but nigori? There is no graininess at all. It is rather dry but with a very strong flavor. When heated up, it becomes more refreshing and easy to drink.

Slight woodworking bond smell
The taste is refreshing.
But it also has a rich sweetness and acidity, making it a perfect cold sake to go with food.
The flavor exploded when paired with tender simmered octopus!

The aftertaste is dry and easy to drink.

Sweet aroma, soft attack. The taste is clean and delicious. Light on the palate, it goes down smoothly and lingers in the throat.
Reminds me of the Nekoma ski resort I went to about 40 years ago.
Junmai-shu, a pure rice sake that is delicious no matter how many times you drink it, and brings out the best of the rice.

Sake in Hagi is good everywhere!
I drank Nagato Kyo, which I bought on a trip to Hagi and brought back.
This sake also does not have much of a ginjo aroma,
but you can taste the rich flavor.
It may be due to the type of sake I chose,
but it may be due to the type of sake selected.

Repeater number one! I was attracted by the pop-up sign that said "No. 1 repeat customer" and it was a great decision.
The second cup was a Sudo Honke's Gonohomare, which had been on my mind for some time. This one had a slightly yellowish color and a sturdy impression. I was told that it is a genre of sake called "Kaoru-shu.
