I wanted to visit the famous Koyama Shoten, so I stopped by on my way to work and found Wakanami and bought it.
This is the third time this year I have tasted Juhikinmu.
On the first day, it was difficult to describe the aroma. It was sweet, with a strong acidity and a light aftertaste.
On the third day, the aroma was sweet like melon, and the sweetness seemed to spread.
On the fourth day, the sweetness is easy to drink and has depth of flavor. The acidity is crisp, but the aftertaste is still very smooth and disappears.

I enjoyed comparing different sake breweries, even with the same rice 😋 They were all delicious, but I think Wakanami was the best 🥰 because it is the rice that originated in Fukuoka 🥰 I highly recommend it 😉.

The aroma is fruity, like muscat.
It is dry, not sweet or sticky.
It flows through the mouth without any unpleasant harshness until it settles in the stomach.
I enjoyed it with wakame seaweed shabushabu and sea robin sashimi ➕ and shabushabu with tsuge 😊.
The reason why I have not tried Wakanami until now is probably due to the austere packaging.
It has a Japanese taste and a classic look.
However, after tasting Wakanami for the first time today, I realized how my preconceived notions had limited my options for sake.
It is very modern and fruity!
It has a sourness and sweetness similar to Senkou and Sancho, and I can see why it is so highly praised by the public.
Looking at the package after drinking it like this, I wonder why it looks so modern.
I'm a cash cow, after all.
