As its name suggests, it has a softness and transparency like a crescent moon floating in midday.
In the mouth, a fresh aroma reminiscent of rum and pears spreads softly, and the texture is surprisingly smooth.
The fresh mouthfeel with a gaseous sensation is outlined by a slight sweetness and a slight astringency and bitterness in the back.
As time passes, the sweetness envelops the entire wine, giving it a more gentle and cohesive flavor.
The slight herbal nuance in the aroma is also pleasant, making it a true "summer Koei-Kiku.
The new challenge of using Hokkaido's sake rice "Ginpu" and Saga's yeast was a bottle that captured the heart of early summer beautifully.
I drank it at craft saké week and enjoyed it.

It had a strong acidity when I opened it, and I thought it would be better to leave it for a while, so I put it in the refrigerator.
