It's been a while since I've had a Koeihiku 🍶.
I was curious about this new series!
As it is an unfiltered, unfiltered, raw sake, the bottle opened with a gentle bounce.
The aroma is sweet, and the initial taste is a bittersweet one, but it is quickly followed by the bitterness that is unique to Kouei Kiku.
The bitterness is quite strong and lingers until the aftertaste.
The sweetness is covered by the bitterness and leaves a dry aftertaste.
It is clear, fresh, and refreshing.
I think the bitterness is a little strong, so I will leave it a little longer.
