Lightly cloudy. Insistence of rich and mellow koji aroma â The ginjo aroma is softly reminiscent of pineapple. The ginjo aroma is reminiscent of pineapple. It is moist, sweet, and thick, with a bitter aftertaste. It was a delicious sake with a deep flavor.

The second drink of the day, at a neighborhood izakaya, with a friend and his wife 🍶. It is one of the brands of Shinshu Meisho, a famous sake brewery in Ding. There is no label on the front and this is the picture but it is a beautiful, fruity, dry and easy to drink one 🍶 🙆‍♂️ It is a typical Nagano sake 👏👏👏.

Shinshu Meisho's famous sake "Takizawa Junmai Daiginjo Shiboritate Naokumi-Non-filtered Nama-shu Takizawa" is brewed at a sake brewery in Ueda City, Nagano Prefecture. Two types of yeast are cultivated in house to give this sake a noble and gorgeous ginjo aroma with a smooth mouthfeel. The taste is refined and polished without being overly polished, leaving the delicious flavor of the rice. It is an umakuchi type sake with a sharp sharpness and a clean aftertaste. Direct kumi-kumi means bottling directly from the top of the tank. Junmai Daiginjo Shiboritate Naokumi Nama-zake Producer: Shinshu Meijo Co. Ingredients Hitogokochi rice Water used for brewing: Kuroyau water, the softest water in Japan Rice polishing ratio 49 Sake degree ±0 Alcohol content 16 Acidity 1.6

It's from the same brewery as Kanae's 😁. I had a good impression of the Junmai Ginjyo Hi-ire before and wanted to try the Nama Sake. I saw the Oorigarami on Kawanishi Shuhan's instagram and went to buy it, but was told it was only available in one bottle 😿. I was told that they only had a bottle of 😿 and that they only had Honjozo in stock, so I bought this one! It has a fruity aroma that is hard to believe it is a honjozo. It has a fruity aroma that is hard to believe it is honjozo. I guess it gives the impression of being fruity and dry. Takizawa is not sold very often, but I would like to try a variety of it.

We compared local sake at Ueda Bessho Onsen in Shinshu, and of the three, this was the sweetest, but not too sweet, and the taste was well balanced with the acidity.

Sake from Ueda, Shinshu. It has a gentle, square texture, probably because it is brewed with ultra-soft water. It is easy to drink and has a well-balanced taste of sweetness, flavor, and acidity. The label design is simple and nice.

I stopped by a corner store in Shinbashi and tried Takizawa, which caught my attention. It is fruity, but not too sweet, and the aftertaste disappears quickly. I think it is an easy-drinking sake.

Today we have a sake ❗️ Junmai Muroka Sake❗️❗️ wrapped in a newspaper from Shinshu Meisho in Ueda City, Nagano Prefecture. The aroma is soft and sweet❗️ sip and you will find a mild mouthfeel followed by a slight numbness and a fruity aroma passing through the nose❗️❗️ sake that is also good as a food sake⭕️

The aroma is reserved but distinctive. Rich umami, moderate acidity. Lingering bitterness. It is refreshing and crisp. Looks good warmed up.

When I always choose my own sake, I tend to ask for the sake I have had before, which I prefer. In search of new encounters, I decided to leave the last drink to the owner 🍶. Here are the sake selections. It is a limited edition bespoke sake from Jizakeya Miyajima, a sake shop in Ueda, Shinshu, and is usually shipped as fire-aged junmai sake. It is marked by a shoulder label that reads "Karakuchi Fruity Nao Kumi," which Mr. Miyajima came up with. He wants it to be called "Karakuchifru Junmai! The aroma is fresh and gorgeous. The aroma is fresh and gorgeous, with a light, fruity feel. Unsweet apples, pears, melon, and blue bananas are covered with the rice aroma of freshly pounded rice cake. Smooth texture. A hint of rice sweetness and a refreshing sourness spreads. From the fruity overtone, a beautiful umami flavor develops. At the end, the dryness goes down the back of the throat in a flash, and it finishes nicely with a sense of refreshment. The 17% alcohol content leaves a warm aftertaste. Oh, it is delicious! A dry sake with a fruity aroma! I realized again that I can drink dry sake that is not only dry and dry but also has umami and aroma, or rather I like it. Dry and fruity = "colorful" and if it becomes popular, I'll be drunk 😊. Thank you for the food 🍶.
