The aroma is gorgeous. The sweet mouthfeel is followed by sourness and a slight bitterness.
I thought it had a strong alcohol content that seemed to rush up the throat, but the alcohol content was 17 degrees Celsius. That's a bit high for a recent sake 😉.
There is a lingering sweetness, but it's not clingy and delicious.
I thought it was the first time in a while that I had a sake that was typical of Yamagata's ginjo-shu. The label also has a modern feel to it, which I like.
I am very satisfied with this bottle.

The aroma is green apple-like. In the mouth, there is a sweetness like apple honey and juicy acidity. The palate is filled with a slightly greenish characteristic flavor and the delicious taste of rice. The spiciness comes immediately after and has a nice sharpness. It was a delicious sake with very good cost performance.
Dry, but mellow and aromatic.
I paired it with seafood, but I think the characteristics of the sake would dominate a bit.
But it is delicious. I think it would probably go well with Japanese side dishes with a strong dashi broth.
It may be similar to Ottersai, or a dryer version of Ottersai.
The mouthfeel is soft, with a soft sourness and sweetness, and the aftertaste slowly spreads down the throat and into the chest, slowly intensifying. The aftertaste lingered for quite a long time, but it was not unpleasant, and the happy time continued.

It is a raw sake, so it is fruity on the palate, but it goes down nicely. There is no excessive acidity, bitterness, or alcohol. It is a pleasant sake.

The ginjo scent is pungent. When you put it in your mouth, you can smell the sweetness of the rice and the ginjo. It has a strong umami taste and the jittery feeling of raw sake. The aftertaste is short and crisp. It has a strong and rich taste, but the aftertaste is clean. It is delicious.

When poured into a glass, a sweet aroma rises.
When you try it immediately, it starts with a sweetness, but it turns into a moderate astringent bitterness and goes down your throat with a tangy spiciness.
The aroma and sweetness linger in the aftertaste, and it is truly a gem of an aftertaste.
It has a slightly high alcohol content and a great taste! We enjoyed it very much.
