Very limited sake from Shuho Sake Brewery
Only 5 stores in the whole country carry this precious sake.
It was named after the image of a lingering aftertaste that everyone finds beautiful like a pearl 🦪.
Gura-chan raved about it so much that I had to copy her and order some myself!

I had never seen or heard of it before, but I was attracted by the stylish label and name ♥️.
It's a gentle taste and delicious ♥️It's not my favorite because it's not too acidic, but I was looking for a new taste, so it was perfect for today's mood 🥺♥️.
I'm not a fan of taking pictures and forgetting the taste 🤣🤣🤣.

I drank it once a year and a half ago, in September 2016, and as before, no detailed specifications were disclosed, as the brewer's intention was "to let you taste the sake as it is without being bound by preconceived notions about the rice or rice polishing ratio". The bottle barely reveals that it is a "nama-shu" (raw sake). The bottle is tagged "Junmai Daiginjo," so we tagged it as such.
According to the product introduction of the sake store, it is a "new brand launched by five Shuho distributors nationwide," "'Pearl' stands for a round grain like a pearl, and 'rhyme' for lingering. The brand name is "Shuho" and "Rhyme" means "lingering".

The label even says that it is made with rice and rice malt from Yamagata Prefecture, but the rice polishing ratio and sake degree are undisclosed. The brewer's intention is "to have the sake taste as it is without being bound by preconceived notions of sake rice or rice polishing ratio," but this is quite unusual.

I've never seen this label before, and I'm a meek person who wants to try it when there's a catch that it's limited to restaurants. 🤣
It must have been a totally different sweetness from the 5 cups I had so far.
I'm trying to recall the details of the taste from my faint memory, but I think it had a good balance of umami and sourness, didn't it? 🤔.
But I was sure that it was delicious 😋😋.
I often order a brand that is new to me, but I've never been disappointed, probably because the owner has a good eye for things 😆👍.
