The cocktail series concludes with the Yonotori x Sakura Wood🌸.
It was particularly gentle among the woody types this time, with a fluffy aroma that harmonized beautifully with the gentle sweetness of the Yonotori. The nuance of cherry wood was subtle, with a soft aroma reminiscent of spring air. All of the woody varieties were modest in terms of impact, but I think they were there to enhance the original beauty of the Yonotori.
In the mouth, in addition to the aroma derived from the wooden vat, an elegant mellowness unique to cherry wood was added, and it lingered pleasantly until the aftertaste. Although not flashy, the gentle taste that gradually permeates the palate is unintentionally enchanting.
Through the Wood Series, I was reminded once again of the depth of Yonotori, with each type of wood showing a different expression.
It was a moist drink that was a perfect ending to the series 🌸.
Next up was the "Yonotori x Chestnut Wood" 🌰✨.
Among the wood series this time, this combination gave me a particularly soft impression. The gentle aroma derived from chestnut wood was added slightly and blended naturally with the wood vat-derived aroma of the Yonotori. To be honest, due to the time involved, we could not detect any major flavor changes, but even so, a slight roundness appeared on the palate, creating a gentle and pleasant taste.
It is difficult to detect differences in aroma depending on the type of wood, but the chestnut wood had a softness that enveloped the entire flavor, and it seemed to enhance rather than detract from the elegant sweetness and acidity of the Yonotori 😋.
Comparing the drinks in this way, it was a very interesting experience to see how the individuality of the wood and the subtlety of the sake overlap.
Next up was the Yonotori x Matcha 🍵✨.
From the outside, this drink had an outstanding impact! The combination of matcha adds a nice astringency to the refined sweetness of the Yonotori, giving it a luxurious taste as if you were enjoying Japanese sweets and sake together. The color is quite dark and the matcha has a strong presence, but the drink is surprisingly refreshing and has a perfect balance of sweetness and bitterness 😋.
The thick texture of the Yonotori softly blended with the matcha aroma, giving it a deep Japanese flavor. It was as if I was sipping an adult matcha sweet, and I discovered something new with every sip 🐤🍶.
The pairing was unique, yet complemented each other to a high degree of perfection. It was a drink that reminded me once again of the depth of creative sake 🌿.
Next up is the "Flax Cat x Elderflower" combination 💐✨.
The glass is garnished with edible flowers, and from the outside, this is a gorgeous and heartwarming drink. The light golden liquid with the colors of the flowers is as beautiful as a spring flower garden. The elegant and floral aroma unique to elderflower blends beautifully with the lactic acid-derived acidity and soft sweetness of flax cat, creating a refreshing impression that spreads softly in the mouth.
It is light and easy to drink, but the alcohol content is actually a little high. The gap between the two makes it a "tasty and dangerous" sake that can catch you off guard 💦.
As you continue drinking, the delicate acidity of the flax cat and the floral aroma blend together, leaving a gentle aftertaste. It was a drink that was a true work of art in terms of sight, aroma, and taste 🌸.
It's been a long time since I've had Yonotori.
I knew it would be delicious! It has a strong sweetness, but the sourness and the muscat-like flavor is great through the nose. Yummmmmm!
This afternoon with a friend from college that I haven't seen in a super long time 🍶.
First Shinsei in a long time. Flax cat spark!
Schwarzingly delicious acidity 😋😋😋😋
Easy to drink like plum wine. But the aroma and taste are complex and deep. It's a quintessential Shinsei!

Today is our 5th anniversary of starting sake 🎉.
I know it's been a while since I've posted, but I guess the anniversary is Shinsei 🤔.
I'm going to go with Tangerine, which I've never posted before!
You can tell from the color of the label that it's citrus 🍊
The aroma is refreshing when you open the bottle!
Good balance of sweet and sour in the mouth 🙂.
It's a fruity sake with a pleasant citrus aroma. It is clear and refreshing.
The acidity is refreshing and I don't get tired of drinking it at all.
As expected of Niimasa 🤔.
I haven't posted in over a year, but I've been drinking sake for a long time.
Lately I've started preferring to drink dry, refreshing sake as well as fruity ones!
I'll post again when I feel like it 🙂.
Good evening, Shiri 😃.
It's been a long time since I've seen you post, and I'm glad to see you here 😆.
I'm glad to see that you are doing well 😆.
Please post again when you feel like it.
Happy 5th anniversary, Shiri~san! 🎉🎉🎉🎉🎉
It's nice to see you after a long time 😭💕and this drink! You're an aramasist✨I wonder if you climb mountains too? Looking forward to another review 😊.
ymdaz, I'm glad you remember me! I've been doing a good job with my sake life, but I don't gather as much information as I used to 😅I'll come back and take a peek to learn more 👀.
I finished the 100 day trip to Mt!
Glad you remember me too Ponchan😂.
As for mountains, I've been taking it easy since I completed the 100 most famous mountains last year! I'm looking for my next sake since Shinsei has been hard to find lately 👀I'll be back here to visit again 🙂.
bouken, it's been a while! Thanks for remembering me 😂I'm looking forward to your next sake, Hanayo 🌸✨️ something coming out soon 🤔.
I'm also hoping for a Jigokin nigori in November!
Miss Shiri
Good evening... it's been a while 🥰.
Congratulations to each other on your 5th anniversary 😊.
As expected! Aramasanist as good as Pon-chan! Let's see what's next 😁.
Good evening, Shiri 😃It's been a while 👋 glad to hear you're doing well 😊.
Congratulations on your 5th sake year at the quintessential Shinsei ㊗️ 🎉The spread to dry sake is also nice 🤗We will be celebrating our 4th anniversary next month 🤗.
Hey kozo, it's been a while 🙂.
It's been 5 years since I started drinking sake! Lately my taste buds have changed and I drink different types than before 🤔 but I like Shinmasa!
Jay & Nobby, I'm drinking more casually now without worrying about trends as much as before 🙂 Jay & Nobby, you've been doing "Sake no Wa" for 4 years next month 🤔I think I've been doing it for longer... I'll be doing it for 5 years next February 🙂.
Hi Takku0103, it's been a while! I've climbed all of the 100 most famous mountains in one day 🙂 I even encountered a bear on the last one, which scared the bejesus out of me💦.
It's going to be a great season to enjoy sake from now on!
Shieri~san, it's been a long time 🤗.
Congrats on your 5th anniversary of sake 🎉!
I knew it would be Shinsei for the anniversary 😆✨Tangerine 🍊 looks delicious 🥰I just happened to get some and am waiting for my turn 😊♡♡♡
Tsubu, it's been a while!
Shinsei is a special ✨️ anniversary is an excuse to drink Shinsei 😁 Tangerine is pleasantly citrusy and I'd like to have it again if I get the chance! I see you got it too, Tsubu-chan 🙂 I'm impressed!
At my usual BAR (1)
I forgot to post the drinks I had at the BAR I went to before my birthday😅.
It's been a super long time since I've had a Shinmasa, and it's a hanpukai limited edition kijoshu 👀.
I'll review it as I remember it since I drank it a week ago😅.
I got the impression that it was dry and refreshing for a kijoshu 🤔.
The sweetness is moderate and the acidity is strong.
It has a bit of gassiness and the bitterness at the end is a bit strong.
Well, maybe my taste buds are still too young, but it wasn't my favorite.
Good evening, Chirsta 😄.
Shinsei🤩I'm not familiar with it, but isn't it great to be able to drink the 2018 Kijoshu ⁉️ I've never seen it at least! Great to be able to drink it, regardless of how it tastes 🙌!
Good evening, Chiesta 😃.
It's nice to be able to drink a sake that's hard to drink ✨I didn't like it ✨I feel that the acidity of both Niimasa and Senkou are still very characteristic ✨I'd like to try it just once 😍.
Good evening, HinaHanaMama🌝.
The master of the bar explained to me that it was quite rare, but the taste was apparently not for me 😅.
But it was a great opportunity to drink a limited edition sake from 7 years ago ✨.
Good evening ichiro18 🌝.
I am happy to have had the rare sake, but a little disappointed that the taste was not to my liking 😥.
It's true that both Niimasa and Senkou have their core fans because of their characteristic acidity ✨.
Process: Kijoshu
Alcohol content: 12% (undiluted)
Ingredients: Rice (produced in Akita), Rice malt (produced in Akita), Sake
Polishing ratio: Koji rice 60%, Kake rice 100%.
Yeast used: Kyokai No.6
Murasaki black rice
So much for the preface. Is it like a combined version of Yonotori and Nirvana Kame? Anyway, if you have a chance to try it, let's get to it briefly!
It has a light red color like rosé wine, maybe a little yellowish? The astringency and acidity of the grapes are conveyed through the aroma. The clear, unctuous brewing water... Huh? Concentrated sweetness is less pronounced than usual? The acidity and astringency are gently wrapped around the wine, making it easy to drink and light. It is easier to drink and lighter than the usual Shinsei, which has a strong grape flavor. The brown rice and the purple-black rice soften the weight of the kijoshu, giving it a new taste for a Shinsei. Genmai kijoshu is good. I hope it will become a regular sake under the name Kamenotori!
Purchased through an independent route!
Miraculously, we received a heavenly frog.
It took a long time to open the bottle, maybe more than 5 minutes....
The aroma is rich but with a hint of sourness.
It is labeled "sparkling," so it feels like a sparkling wine.
The taste was fruity and sweet, with no bitterness at all.
The low alcohol content made it easy to drink as much as one wanted.
I wanted to drink it with care, but I opened the bottle early 😅.
I would buy it again if I could!
Rice polishing ratio 60% for koji rice, 60% for kake rice
Alcohol 9%.
Color: A little cloudy with a hint of haze
Preference ★★★★☆
