Shinsei's Colors Series
I got a bottle of Viridian.
When I tasted it, I felt it was the least unique of all the Niimasa's I have had so far.
The aroma of the wooden vat is subdued and the image is clean and sharp.
Still, it has a solid umami and acidity, with some gasiness.
It is quite an honorable taste 🍶.

A special 9th anniversary bottle of Shinmasa at a corner bar. The bottle is a beautiful red bottle, but unfortunately, we are not allowed to show a picture of it.
The aroma is clean and fruity. It has a sweet and sour taste similar to that of apples, and is not like sake. It is just too delicious.
I brought NO6 Takachiyo Sharaku to a gathering of my friends,
Sharaku is a local sake, so many people knew about it,
but there were no one who knew about NO6 and Takachiyo,
I thought that even among my sake-loving friends, that's not so bad.

Shinsei Ash - Suiboku
It's been a long time since I've had a bottle of Ash!
A while ago, a local liquor store was having a "Shinsei Week", but I couldn't get the Ash that I was so close to.
When I could get it, I could get it in an instant 🙄 I've been able to drink it while I was able to get it 🙄.
I drank it while I was able to get it 🥹.
The glass poured out has a sweet fruity aroma, with hints of Japanese pear and white peach, and the wooden vat gives it a soft oaky aroma 🤤.
In the mouth, a clear sweetness spreads and is blended with a clean and beautiful acidity like plum 😋.
The acidity is mild but has a strong presence, and the balance of sweetness and deliciousness is exquisite 😌.
It is the kind of sake that makes you feel elegant 🥰.
I heard it tastes better when aged, so I'll leave it on ice for a while: ❄️
The black bottle is cool, but I prefer the previous white transparent bottle 😑 lol
I'm also encountering a mysterious phenomenon where if I had some tangerine, I could form a new political squadron, but I can't find the best one 😑.

Yes 😭 for some reason tangerine is the only one I haven't found even a trace of 🥹.
It's almost a squadron, but when I lined them up they were so colorful and stunning 🥰.
I wish they would stop selling them at pre-priced prices 😑💢.
We had a visitor whose birthday 🎂 was close to ours, so we decided to open the bottle 🥂 and drink it together since it says the quality date is in November.
This is the first time to drink it at home.
The aroma is citrusy and sour.
When you drink it, it has a chili shuwa🫧kyu🫧 sourness and also a chest-like aroma, perhaps coming from the wooden vat.
While containing the liquid, you can feel the slight astringent acidity of the wooden vat all the way through, as well as the sweet and sour tingle of the wood vat. It is clear, yet finishes with a herbal flavor.
After a few days, the bubbles disappear and the mouthfeel becomes clearer.
But it tastes best when freshly opened!
By the way, my guest said it has a surprisingly Japanese sake flavor! and 👀 compared it to the Pagu that I brought up the other day, and said that both are delicious, but the Pagu is easier to drink and has no habits! He said it was easier to drink.
I wonder if the wooden vat is somewhat of a draw?
