A very limited raw version of the standard Junmai sake. According to the third generation of the crazy salad hall, why don't they serve it on a regular basis? I asked him why they don't usually serve it, and he said the brewer said it's too much trouble 🤣. Also, the winter-only Honjozo Shiboritate and Nigori sake are not written on the labels, but they are still raw sake. I think it says "unfiltered" or "active nigori" on the bottle. I don't know if it is a strong sake or not, but it is sold at room temperature. Maybe this is also unfiltered nama-zake, I don't know. I have the impression that it is fresh, fruity, and pungent at the same time. It has a freshly-ripened fruitiness with a strong alu-ness. There is a cherry-like nuance🍒. As koge2 said in his review of the fire-entry, it has a unique taste that is complex and hard to describe. All the Miwafuku reviews I've had in the past say it's unique too 🤣.

This sake is limited to two liquor stores, one in Sakai and the other in Kishiwada. Only 12 bottles are in stock, so the next time I come back, there won't be any left, so I was allowed to try a special sample before purchasing. It has a rather gorgeous ginjo aroma. It has a low alcohol content and is sweet with a gentle taste. It is low in alcohol, but you can feel the fullness of the flavor. It has no gaseous feeling, but it is fresh. It can be used by itself or with food. Shimada Special is delicious no matter what you drink.

This sake is limited to two stores, Tomegawa Sake Shop in Kishiwada (Crazy Salad House) and Kagaya in Sakai. This sake is a collaboration between Mr. Shimada, a young brewer of Senrikyu, and a young liquor store owner. I think the young person was also in charge of the label design. The rice used is Aiyama and Yamadanishiki. Low alcohol unfiltered raw sake The aroma already raises expectations. It has a juicy, berry-like, cute sweetness. It's hard to describe, but it's very well-rounded. It's a long way away, but it's a sake that makes you glad you went to buy it. I heard that Tomegawa has already sold out of the 4-gos. They said they will soon release a second light nigori.

Fresh, fruity and juicy. A unique flavor with a chemical feel. It also has a rummy taste. It has a unique freshness and citrus acidity. The Junmai Daiginjyo unfiltered draft I had before was similar, but cleaner and without any peculiarities. This is so good. The third generation of the liquor store owner here is amazing at remembering people's faces. I only met him twice last year (I was there only on my days off due to bad timing), but he told me thank you for coming from far away.

Like Hiraizumi, it uses white malted rice and low alcohol content. It doesn't say, but the rice is fukuhikari. I don't know what kind of rice it is. I bought it at a crazy salad hall with a Junmai Daiginjo of Ura-Harushika. It has a lot of ori, so when you pour it, it looks like makgeolli. The aroma has a complex nuance with a graininess. On the palate, there is a small amount of graininess and sweet acidity. It has the same alcohol content as the Hiraizumi we just opened, but this one has a gentler nuance. I wish they would release an active version of this! The next sake I open may be nigori, too.

I was going to buy just the Toyonou plum, but when my stamp card was full, I was offered a 1,000 yen discount, so I chose this one in addition. The aroma was gorgeous and a little pineapple-like. It has a beautiful sweet flavor with a pineapple-like aroma. I think you can't go wrong with Uraharu Shika and Shikanaru. I wonder if they ripened a little in the store. I would have liked to drink it in a fresher condition. This liquor store stocks a lot of sake at the beginning and takes time to sell it, so even if they are a little late, they still have some in stock, unlike other stores. The display of kirizukuba is spectacular!

Back spring deer I couldn't get at takimoto's, got it at the crazy salad hall! It is the first Harushika to be finished with a low-alcoholic, gaseous finish. It has a slight bubbly taste, with a sweet and tasty rum-like flavor. I'll have to try a lot of Uraharu Shika because it tastes good no matter what I drink. The fourth photo shows Maruho Sake Shop, a distributor of Shinshu Kamerei near Kyocera Dome. The installations are I've never been there, but I'm wondering if anyone has been there. I saw on the Stories page a while ago that they have Shinshu Kamerei in stock.

It seems to be the best tank of alcohol the president has ever had. It tastes like melon🍈. Unlike Kirizukuba and Urasato, it is spicy. The impression is that it is fresh and dry with a melon flavor. Although it is dry, it is easy to drink, so if you are okay with fruity flavors, I think it is a type of sake that can be enjoyed by everyone. It has the same easy-drinking quality as Kirizukuba and Urasato. Is this drinkability a characteristic of this brewery?

It is said to be unfiltered raw sake, although it is not written on the bottle. It says "nigori" but I wonder if it is just a light nigori. Strong gassiness. The taste is fresh, tropical fruit-like and rich. Both sweetness and acidity give a gentle impression. The taste is reminiscent of Takachiyo. A brewery that I personally pay attention to.

This is a sake made with a new edible rice called Niji no Kirameki and yeast from 7 different types of sake. It's a sweet juicy sake with a gassy, rich fruitiness. The acidity is also very fruit-like. It seems difficult to make a good sake with edible rice, but Shirakihisa's sake is so good that it's amazing. I don't drink a lot, but I don't think I've ever had a bad bottle. The yeast used is 6.7.9.10.11.14.1801.

The rice is called Chiyonishiki, which I've never heard of before. It's been almost a year since it was produced, but it's not nearly as ripe as it should be. It's dense, sweet, and dark like pineapple. The aroma and taste are a cross between a dense pineapple feeling and a light aged feeling. There is a gorgeous ginjo aroma that comes through the nose. It's generally considered to be dry, but it's sweeter than I thought it would be. I was surprised that the owner remembered me even though we only talked once last August. He even remembered what we had bought last time and where we had come from. He's young, but he's a good businessman. I've visited him several times, but there were days when he wasn't there, so I'll try to go on a day when he's there next time. The third picture, I drank Hayaseura and it was full of Fukui sake😅. The fourth one, Echinotaka, has 4 stars, but I've never seen it for sale? Maybe I just missed it?

I didn't know it, but it seems to be an affiliated company of Tatenogawa. They bought a brewery that was closed because there was no successor. The weight of export to Hong Kong is high, so they have capital from Hong Kong companies. A liquor store that I follow on Instagram (search for "crazy salad hall") is highly recommending it, so I bought some. It's juicy and gassy. The sweetness is moderate and dry. It's fresh and juicy as the name suggests. I think it's good to be paid more attention. It becomes more muscat-like after a while. It's only available at the Salad Kan in Sake-no-wa, but I bought it at the Tomegawa Sake Shop. It's somewhere between Nankai Tadaoka station and Haruki station. The brands they sell are Furozumi, Kinatake, Harushika (also Ura Harushika and Kanaru), Sawanoi, Goyu, Kirizukuba (first time in Kansai!) They also carry a wide range of craft beers such as Furozumi, Shirokiku, Shinkai, Hakurei, Miwafuku, Amano-shu, Shou no Sato, Saijotsuru, Wakaze, etc. The owner is very young and has a wide selection of craft beers. My recommendation for you is going to be awesome😅.

It finally appeared in Kansai, so I bought it. (It seems to be the first in western Japan) According to the information on the internet, it's made with multiple yeasts. It's more wine-like than sake made with wine yeast. It looks like wine, but I've never had it before. It's not too much wine, not too much sake, just rice wine. There is no indication of the rice polishing ratio, so you might think it is a regular sake, but the pop-up at the liquor store says that it is a honjozo, with the rice polishing ratio and sake content written on it.
