This is a sake made with a new edible rice called Niji no Kirameki and yeast from 7 different types of sake. It's a sweet juicy sake with a gassy, rich fruitiness. The acidity is also very fruit-like.
It seems difficult to make a good sake with edible rice, but Shirakihisa's sake is so good that it's amazing. I don't drink a lot, but I don't think I've ever had a bad bottle.
The yeast used is 6.7.9.10.11.14.1801.
