7/10 The Iso-Proud Youth Series. I don't know anything about the concept. Special Junmai made from 58% polished Yamadanishiki from the Tokushu A district. There is almost no aroma rising from the glass. It has a mild umami flavor, and the aroma rises in the mouth. The taste is easy to understand: elegant and good sake. It is the kind of sake that is easy to drink.

7/10 Another fashionable sake from Houou Mita. This sake is made from 40% polished rice of Gohyakumangoku grown in the former Mitamura district of Oyama City, Tochigi Prefecture, and is said to be available only now. It is a luxury sake made using the traditional sake yeast and aged for three years. It has a strong aroma, and the richness of its flavor and umami is outstanding. The acidity and sweetness are well balanced and matured, but the taste is gorgeous. Hououmida is very strong in being able to produce this kind of sake.

6/10 Shoyuki's Autumn Sake. The sake had a calm taste, just like an autumn-agari sake. It has a kind of Shizuoka-like atmosphere, and is good to drink with a meal. The rice used was apparently Ginga. It is quite rare, but I guess different breweries have their own specialty rice.

6/10 A sake made with Dewa-no-sato and No.6 yeast. The taste is a bit subdued and the aroma is restrained. It is a mature sake with a mild and slightly acidic taste. The label says it can be warmed, but my impression is that lukewarm heating is just right for this sake.

7/10 I haven't had a drink of Amami since Mr. Fujioka quit. Not that I was aware of it. I didn't know they had come out with such a bright red label. It is said to be a dry sake, and it is indeed dry. It is said to be dry, and it is indeed dry. I had been drinking quite a bit of it, but...hmmm. Anyway, it is a good sake. Let's drink with Amami again.

6/10 I wondered what 13 was, but it turned out to be a 13 degree sake. A refreshing Kamikigen. The taste is quite soft, so I have the impression that the timing of drinking it may be a bit difficult. If you don't drink it with a low alcohol content in mind, you will probably finish it quickly. It was a gentle sake.

6/10 First sake with a cute label I've ever had. Fukushima's Yume-no-Ko and Fukunoka are used. Quite fruity. Ananas means pineapple, apparently. Oh, the label is pineapple? This sake can be drunk like a white wine.

6/10 Shinanonishiki hiyaoroshi. I drank it for the first time, but it is said to be very dry with a sake degree of +10. I have an image that there are not many hiyaoroshi with a very dry taste. I wonder if there are actually quite a few. Even though it was dry, it had the umami of rice and a full flavor. It has a nice sharpness, so it is easy to match with a meal.

6/10 I just had a Yamamoto meeting and now I'm drinking Yamamoto again. It's no surprise, but the impression of sake changes depending on the occasion of drinking, the glass, and the food to be served with it. I think it has a bit of an astringent taste when I drink it now. I wonder if it is also orange.

6/10 Hiyoroshi of Amego no Tsuki. Hachikan and No. 9 yeast are used here. It is a well-balanced sake, and is meant to be savored gradually. Since this was the first sake of the day, I thought it was supposed to be a slow saké, but that was not the case at all. It was calm and I would have preferred it at room temperature.

To support the recovery. A collaboration sake that we hope will never happen again. Documentation of the label will be provided. ------- To the reconstruction The Sakurada Sake Brewery in Suzu City, Ishikawa Prefecture, was completely destroyed in an instant by the Noto Peninsula earthquake. The brewery's head brewer, Mr. Hirokatsu Sakurada, has been working to rebuild the brewery step by step from the rubble spread all over the area. This sake is a blend of miraculously surviving Noto Hatsuzakura Honjozo and Tengu. Profits will be used to fund the reconstruction of the Tsuneda Sake Brewery. Please support Noto Hatsusakura. Mr. Sakurada supervised the taste of this sake. Please enjoy it while thinking of Noto.
