KAUSUMORI Junmai Daiginjo - Yamadanishiki 40- Nama-shu
Finally, we could meet Yamadanishiki from Kakusumori.
I'm looking forward to it!
Gorgeous aroma.
Fruity sweetness and acidity.
Soft bitterness at the end.
The overall impression is well-rounded, perhaps because of the 40% rice polishing ratio.
I knew it would be delicious, and I confirmed that it was indeed delicious.
I am so happy.
A-Sakura Junmai Ginjo Unfiltered Nama-shu, Nakadori, Limited Edition
This is my first A-Sakura.
I bought it because I thought I had to drink it someday, but then I remembered that it was Ringo-chan that I wanted to try.
I got myself together and opened the bottle. The aroma is sweet and sour.
When I drank it, it was juicy and thick. It is delicious with firm acidity and sweetness.
The alcohol that passes through the nose as it goes down the throat with a pungent taste at the end is also good.
While you are drinking it, you will be pleasantly intoxicated.
I like this one a lot.
Today is finally the 700th check-in, and I was wondering what to open, but I opened a bottle of Senkyoku's seasonal sake [Hope!
This sake is a support sake assembled to bring hope to those who have been affected by the disaster around the world!
It is an assemblage of Kame-no-o O, Yamadanishiki O, and Omachi, and the taste is light but delicious, with a ripe grapefruit sweetness and lingering aftertaste, and a fairly refreshing mouthfeel.
This year, we are buying more and more bottles, so the check-ins will be slower, but we are looking forward to enjoying the changes in taste and temperature after opening the bottle!
Rice polishing ratio: 50% for koji rice, 60% for kake rice
Alcohol content: 14%.
Good morning, Kumakichi 😀☀️
Congratulations on 700 check-ins 🎉🎊🎉Senkou is good for the last number 😊👍I hope you continue to have peace where you can relax and drink 🥳.
Hello, Manachie! Thank you for your message! This sake was light and perfect for the coming season. It's good that the assemblage expands the enjoyment and taste of sake!
Hi Kumakichi 😃
Congratulations on your 700 check-in ㊗️㊗️㊗️㊗️㊗️㊗️㊗️ 🎉 Hope! May the day come when people all over the world can enjoy drinking and toasting in peace 😌. ❗️
I love Hana Yuu, of which Sake Mirai is a great favorite that I have had many times!
The label of that Sake Mirai has been redesigned in black to give it a more dignified image!
I immediately bought a bottle and when I opened it, it was sweet and tasty, and extremely delicious...
The harmony of sweetness✕ acidity✕ umami is like biting into a high quality sweet ripe muskmelon!
We finished the bottle in less than 3 days!
Rice polishing ratio: 50% (100% Sake Mirai)
Alcohol content: 16%.
The second bottle was also opened today!
We always pre-order this bottle at this time of year, "Krewashibito Kuheiji Usu Nigori"!
This light nigori sake brewed with Yamada Nishiki from Kurodano-sho is a bottle that you can only get if you pre-order in advance during this season!
It is very fresh, but the mildly integrated acidity on the palate and the grapefruit-like bitter aftertaste are delicious... Sorry for my poor expression every time...
I am sorry to say that after swallowing the wine, you will not be able to stop, because it is so pleasant with its umami✕bitter✕alcoholic aftertaste that changes at the back of the tongue....
I heard that sometimes there are cancellations of reservations, so I'll check with the liquor store and be lucky if I get a chance to repeat...
Rice polishing ratio: Undisclosed (100% Yamadanishiki from Kurodasho)
Alcohol content: 16%.
We were told that the new "Green Naturals" from Senkou's Naturals series has been released, so we had a quick taste!
At first glance, I didn't recognize the label as SENKYO, but the label on the back of the bottle was written with SENKYO's typical attention to detail and explanation!
Green Naturals is a supernatural sake that goes beyond "natural" and is brewed with 90% low-polished Kame-no-o rice and completely additive-free, reviving an ancient technique!
With an alcohol content of only 10%, it is very light on the palate and pleasant to drink!
Is this sake? Is this sake? It is so light that I think it might be a little too much for me...
The aroma is a refreshing green apple aroma, and when you take a sip, you can feel a very, very light sweetness, acidity, and minerality, but after swallowing, it disappears quickly.......
It was a bottle that did not have much of a sake-like feel to it...
It is easy to drink for beginners and people who are not good at sake = I, who usually drink sake, would like a little more mellowness...
Rice polishing ratio: 90% (Domaine Sakura Kame-no-o)
Alcohol content: 10
Opened the third bottle of this season's Snowman.
Sake no Akiyama has a Snowman every year until early spring, so if I feel like having a drink at this time of the year, I'm always there!
It is still the same milky rice juice, but the umami has matured a little more than the sweetness from the first shipment.
We enjoyed a bottle full of rice flavor!
Rice Polishing Ratio : Koji rice 50%, Kake rice 60% (Domaine Sakura Yamadanishiki)
Alcohol content: 13%.
After a few days of abstinence from alcohol for various reasons, Kameizumi Cel-24 was opened at noon on New Year's Eve to start the pre-New Year's Eve!
I opened it after lunch and hoped it would last until New Year's Eve, but it was empty before I could wait for dinner.
Well, it's an easy-drinking and delicious bottle!
Fresh but gorgeous fruity taste like pineapple with a little bit of greenness.
The refreshing acidity mixed with minerality makes for a delicious, clean drinking experience!
Rice polishing ratio: 50%.
Alcohol content: 14%.
Next, we opened a bottle of Hachinohe Shuzo's low-polished [KM96].
This bottle, made with the Kimura family's "Mashigura" rice, has a 96% milling ratio, and when poured into a glass, it has a yellowish tinge to it.
It is characterized by a wild flavor and acidity that is like biting into an ear of rice without any sweetness.
I think this one will be delicious even when heated up!
Rice polishing ratio: 96% (100% Mashigura rice is used)
Alcohol content: 13%.
The end of the work year is safely over, and we are now on our year-end vacation, so we will be drinking sake from noon!
Lately, I like to sip on low alcohol, so I opened a bottle of Sake Cidre by Hachinohe Shuzo, famous for Mutsu Hachisen, which I had been curious about!
Aomori Prefecture is known for its apples, and Hachisen seems to be the first brewer to use malic acid yeast in their sake.
The sweet-sour, apple-like taste and the shriveled texture make for a pleasant drinking experience!
Rice polishing ratio: undisclosed
Alcohol content: 12
The second one is a UNITED ARROWS collaboration, UA Snowman.
While the normal Snowman is 100% Domaine Sakura Yamadanishiki, the UNITED ARROWS collaboration sake UA Snowman is an assemblage of 75% Domaine Sakura Yamadanishiki and 25% Domaine Sakura Kame no O
We opened both bottles and compared them!
When we compared only the supernatant, we got the impression that the UA had the same fresh aroma and flavor, but the UA had a more extended flavor after drinking.
When I mixed the ori (a little bit of corkage), I found that the UA Snowball had a milky sweetness and umami flavor that made it more enjoyable to drink, but I was impressed by the mild acidity and umami flavor of the UA Snowball.
Either way, delicious! That is my conclusion.
Rice polishing ratio: 90% (75% Domaine Sakura Yamadanishiki, 25% Domaine Sakura Kame-no-o)
Alcohol content: 13%.
This morning, I woke up to the black cat's intercom to pick up my package and two Senkou snowman glasses I was able to order arrived!
The Sentori Snowman and UA Snowman, which we had stocked up on for this occasion, were opened!
The first one is a normal snowman.
While the normal Snowman is 100% Domaine Sakura Yamadanishiki, the UA Snowman, a UNITED ARROWS collaboration sake, is an assemblage of 75% Domaine Sakura Yamadanishiki and 25% Domaine Sakura Kame no O!
We opened both bottles and compared them!
When we compared only the supernatant, we got the impression that the UA had the same fresh aroma and flavor, but the UA had a more extended flavor after drinking.
When mixed with Origami, both wines had a milky sweetness and umami that added to the drinking experience, but the Yamadanishiki had an impressive extension of acidity.
Either way, delicious! That is my conclusion.
Polishing ratio: 50% Koji rice (100% Domaine Sakura Yamadanishiki)
Kake rice 60% (100% Domaine Sakura Yamadanishiki)

The highest peak of Hanamup series 🙌
It's better when it's a little cold than when it's perfectly chilled.
It tastes better when it's a little cold than when it's perfectly cold 😋.
Drank slowly with a meal 😋.

Hi Satomi😄
It's the highest peak and the most expensive⁉️ flower eup 😆.
It's so expensive 😅
I bought another one while looking at it at the liquor store lol
Good evening, T.KISO 🙌It was quite pricey but I took the plunge and bought it 🤣I enjoyed it a lot in one bottle 🥰 I'm sure you're right about the flower eups 😋.
One that I had stashed away in the cellar.
The acidity is pleasant 🍏🍎.

I found and bought a bottle of "Hi-Tsubin - Hukyuu - Type A", which I had not come across many times in the series of Tobirazumi Honpo, which I loved and used to drink every day for a while.
Brewed with Yamahai O, O white yeast and No.77 yeast, I was very excited about the taste!
I'm a sucker for the extremely sweet taste of Yamahai, but the taste of Hibu was relatively refreshing, even for a brewer like Tobirazumi!
The sweetness of the taste is as expected from Tobirazumi, and the sourness with malic acidity from the sweetness is quite impressive!
This is one for those who like sweet and sour! Personally, I wanted to sip it like a dessert!
Rice polishing ratio : Koji rice 50%, Kake rice 60% (100% Akita Sake Komachi)
Alcohol content: 14%.
The weather in Tokyo has turned from summer to winter in one fell swoop, and my body is limping...
But I managed to get through this week, and as a reward, I'm going to play "Akatombo 2022" (Red Dragonfly 2022) when I say autumn.
I repeated this several times last year, and as the temperature rises from chilly to warm, the sweetness and acidity become more pronounced.
It's like biting into a green apple! It was a bottle to enjoy the season!

I had it on the rocks in an awamori glass 🤭.
I finally opened it just before the end of summer 🤣.

I had a very good thing happen today, so I opened a bottle of Machida Shuzo's ? (Triple Hatena), which was a personal hit last year.
Last year, it was an unbeatable 1,100 yen (including tax) for a four-pack, but this year the price is 1,320 yen (including tax), which is a slight increase...
This year, the price is slightly higher at 1,320 yen (tax included), but the rice polishing ratio and even the rice used in the bottle are undisclosed.
When the bottle was opened, it had a grape-like aroma, and as you took a sip, a more gorgeous aroma spread out, and the sweet flavor filled your mouth with soft gas, and it was delicious.
Even if it is called Junmai Ginjo, there is no doubt that it is the most cost-effective one!
