This is the flagship of Tsuchida Shuzo, the only sake brewery that trained at Shinsei Shuzo. This is the only sake brewery that trained at Shinsei Shuzo. As I was impressed by the taste of sake after drinking Shinsei I was so impressed by the taste of sake that I couldn't leave it behind (laugh). My impressions on the first day of bottling at room temperature. The appearance is a greenish yellow like rice straw. The aroma from the koji is strong. In the mouth, the flavor of the rice comes to the fore. It's no wonder it's controversial. Overall, it has a clear taste without any miscellaneous tastes. It has a similar impression to the Shinsei. ISARIBI Special Junmai Hiiri Hachinohe Sake Brewing Company (Hachinohe City, Aomori Prefecture) Sake meter value +5.5, Rice polishing ratio 60%. I like it very much. The nose is green apple. Dry and refreshing throughout. It's 60% polished, but there is no bitterness. Are you sure it's 60%? I think. The back label states that the sake is for seafood. I drank it with some salted fish. The fishy smell of salted fish is mitigated deliciously. I think it fits well. I love Aomori's sake, called Tazhu.

Miyagi Prefecture, Hagi no Tsururu. Special Junmai. Sake meter value +2〜+4%, Rice polishing ratio 60%. The sweetness is moderate, the mouthfeel is refreshing and you can't help but gulp it down. A few days after opening the bottle, it becomes thicker and more mature. It is delicious after autumn.
