It has been a year since Akiagari was first served in September 2023. 🥰 It has a subtly fruity aroma, with a well-balanced spread of acidity and bitterness in the mouth, making it feel sharp and slightly dry 😋.

I got a call from a familiar izakaya manager informing me of a new arrival last weekend, and again today, so I had no choice but to drop by as soon as the store opened... I gave myself a weird reason to go in 😅.
Tonight's sashimi platter consisted of salmon, sea bream, and fuefki snapper 🥰.
A little aroma of wooden vats. It's a light, sweet sake with a bit of stimulation on the tongue 😋.

The aroma is subdued, and when you put it in your mouth, it has a pleasant stimulation peculiar to nama-shu, followed by sourness and bitterness, making it a well-balanced sake.

Tonight's sashimi platter is a 4-piece set of Ukka Rasago, Bonito, Shirasu, and Seared Spanish Mackerel with Salt and Lemon.
Actually, this is the second type of sake I ordered today, the first was called "Orikagarami Hiran" on the store's bulletin board, but I couldn't find any orikagarami at all😅I checked and it seems that if it is unfiltered raw sake, it is orikagarami, which is a type I had already encountered but with different alcohol content, so I just had to update the information 😃.
The aroma is subdued, the acidity and bitterness are well balanced, and the sake is clean, crisp, and slightly dry 😋.
Yeast isolated from cosmos... but I can't really tell the difference since I don't even remember the aroma of cosmos😅

Today's 8th sake is Garakudai, which is a new brand for me. I didn't even know it was called "Utashiro" 😅.
The aroma is not fruity, but it gives a hint of the deliciousness of rice 🤗.

The aroma was not fruity, but had the umami of rice that you get with Junmai and Tokubetsu Junmai 😃.
Slightly dry on the palate, with a slight sourness and bitterness 😄.

This is the sixth sake of the day.
The aroma is subtle, foreshadowing the deliciousness of rice, and when you take a sip, it seems to assert that it is a dry sake, followed immediately by bitterness and sourness.
As a personal preference, I gave it 3 stars in comparison to Tomikyucho Shinbashi no Otoko-tachi no Sake, which I had before this sake😅.

The label might make you imagine a playful taste, but it is a rather heavy (sitting) sake with a rice aroma, slight stimulation on the tongue when you put it in your mouth, a little dryness, sourness and bitterness spreading out.
It goes well with sashimi, tonight's snack 😋.

This is the third type of sake we had today.
It is a delicious sake with a hint of lychee or pineapple aroma and a slight stimulation on the tongue like a raw sake, followed by a pleasant spread of acidity.

It may be perfect as a summer sake with edamame or chilled tofu as a side dish.

The seventh and last sake was "Jyushidai", which I would drink even if I had already had it.
On 20220930, I had encountered [Nakadori Junmai Ginjoshu Namazume Akaban Omachi 80% Polishing ratio 50%, ALC 15 degrees] and for a moment I thought it was the same sake... but this was Junmai Daiginjo 😅.
Fresh aroma, mellow in the mouth, fruity aroma like lychee, slight stimulation on the tongue from the raw sake, followed by a good acidity 😋.
Delicious sake at the end of the meal...I'm so happy 😄!

Tonight's sixth sake is a bit more adventurous 😅.
Please drink it with carbonated water because of its high alcohol content.
It was written as "Enjoy it as a highball of sake".
First, I had it as it was. It has a fresh aroma, a slightly mellow taste, and a very strong lactic acid taste. It tasted like a mmmmmm 😓.
I drank it with soda as recommended, but it tasted like rice shochu...so I thought it was not good enough for my taste 😥.

Tonight's fifth sake was Hyakugakumon🤗.
When it was poured into the glass, it was a little cloudy like an ochigara-mi 😊.
When you put it in your mouth, it suddenly asserted itself as a dry sake, followed by a soft sourness and bitterness 😋.

The fourth kind of sake tonight is drunken whale.
It's a dry sake with a sharp taste in the mouth, and it was so good with bonito sashimi with grated garlic 🤗😋.
I guess Tosa sake goes well with bonito 😅.

Tonight's third type of sake is Gizaemon.
I haven't encountered it in 10 years🤗.
I first encountered it in 2014 at a hotel when I was on a business trip to Mie Prefecture😊.
At that time it was a junmai ginjo (60% rice polishing ratio, 15% ALC), so I decided to count today's sake as our first encounter 😘.
The aroma was not so strong and the sake was refreshingly crisp and slightly dry on the palate 😋.

100% ancient rice Sobei early maturing
⭐️⭐️⭐️⭐️ Polishing ratio 50%, ALC 15%.
The brand name is a unit name derived from the first letter of the four breweries that brew Yamagata Masamune, Tatenokawa, Toko, and Otokoyama.
Today's second sake was the second sake made with Sobei Sousei, following Tatenokawa Shuzo's Junmai Daiginjo-shu Shield (2022/10/22).
It has a slightly peculiar taste, perhaps due to the rice used to make it, but it has a good balance of acidity and bitterness, and the umami of the rice is unique...but when served with snacks, it mellows out and is the perfect sake for a mealtime drink🥰.
The only one left is "Yamakawa Mitsuo" brewed by Otokoyama Shuzo...I can't wait to try it 🤔.

My familiar Chirori-san hasn't visited in about a month, and after counting down my fingers for the new sake I'm going to encounter, let's have it! 😅😅
First, as usual, we start with a sweet sake 😃.
This is the second sake I've had with Mori no Kuma-san 🤗.
The aroma is not so strong, and when you put it in your mouth, there is a slight stimulation on your tongue, and a gorgeous pineapple-like aroma escapes into your nose 😋, it is a refreshing sweet sake too!
By the way, tonight's sashimi platter consisted of kinome, scallop, bonito, flower sea bream, and sea bass 😘.
