We ordered the sashimi platter for tonight.
It consisted of octopus, scallops, horse mackerel, and monkfish.
Slightly aromatic, with a slightly sweet, mild flavor.
It is a sake with a slight carbonation and the flavor of rice can be felt.

It's a new year, and for the first time, I received a picture of the new arrival of sake from my favorite izakaya 🤗.
I decided to go out to the store as soon as possible because I was expecting to have my first encounter 😋 with 9 kinds of sake 😅I decided to have it with Yuzuri.
It was a refreshingly sweet sake with a muscat-like aroma and flavor.

I thought I had already posted this review, but when I searched for it, it wasn't there, so here it is again.
20230113: No indication of sealed [raw]. I wonder why?
It's a fresh sake with a shwashy feel to it. It is light and cloudy, but it is smooth and easy to drink.

The supernatant has a refreshing taste and the carbonation of the raw sake. When mixed with Ori, the carbonation remains, but the taste becomes mellower.

100% Omachi, 60% polished rice ratio, 15% ALC
It has a rich aroma, and in the mouth, it is a slightly sweet sake with a mild taste and the flavor of rice with little stimulation from the raw sake.
Chigasaki Chirori: 20250113, 20241221 ましらのやまさんJunmai Ginjo Kasumi Nama Sake⭐️⭐️⭐️⭐️
Polishing ratio 55%, ALC 15%.
This was also unsealed, so we enjoyed the taste after mixing the supernatant and the ori.
It had a subtle ginjo aroma, and when the supernatant was poured into the mouth, we felt a tingling sensation on the tongue, which is characteristic of nama-zake, while the taste after mixing the oli was slightly sweet.

Slightly dry, refreshingly suited and drinkable, with a refreshing acidity and bitterness.

100% Yamadanishiki, ALC 14%.
Fukuda Shuzo, Hirado-city, Nagasaki
Since it was unsealed, I had the Kamisumi first and then mixed it to enjoy the taste of Orikarami.
The Kamisumi has a dry, clean taste. When mixed with the orikarami, it had a mellow and mellow taste.
The carbonation was strong in both cases, and we were able to enjoy two different tastes of sake in one bottle.
It is a privilege to be able to enjoy it because it is a sealed bottle 🤗.

This is the 13th sake from Izakaya Chirori's 10th anniversary event.
It is a sake with a subtle aroma and a gentle sweetness and umami taste in the mouth.
The master served us "Yuzu Junmai Daiginjo Kakemai: 71% Yamadanishiki
Koji rice: 21% Izu Tsannin
Polishing ratio 50%, ALC 16%, Sake degree +9" was served as the 14th sake. I had already had this sake, but I was blissfully happy to finish it with a dry Junmai Daiginjo.

This is the 12th sake from Izakaya Chirori's 10th anniversary event.
It is a robust sake with a unique aroma and flavor unique to Yamahai (mountain waste) 😋.

20241201: This is the 11th sake from Izakaya Chirori's 10th anniversary event.
I forgot to take a picture of the label on the day of the event 😭😱I was able to take a picture of it a week later on 12/07 when we held a get-together because it was still left 🤗.
It is a little dry and refreshing...but it has a slightly peculiar aroma. I wonder if it's a quirk of the sake rice, tamaei...

It is a slightly dry, sukkiri sake.

This is the 9th sake from Izakaya Chirori's 10th anniversary event.
We enjoyed it at room temperature🤗.
It has a good balance of sourness and bitterness and is a sake that you will never get tired of drinking 😋.

This is the seventh sake from Izakaya Chirori's 10th anniversary event.
I received a similar sake labeled "Hitakami" before (August 22, 2022), but it was 100% Yamada-Nishiki, so I registered it as a new sake.
I guess it is a little dry 😅😅.
Hidakami has an interesting type of label, but it is a delicious sake...

The aroma is of malted rice 😅.
It is a mellow, full-bodied, slightly dry sake with a delicious rice flavor.

This is the third sake at Izakaya Chirori's 10th anniversary event.
We have had this sake before (May 8, 2023), but it had an ALC of 15 degrees at that time, so we decided to register this 14 degree sake as a new one.
As I expected, it is a refreshing sake with acidity and rice flavor. The strong acidity makes it seem a little dry...but in fact, I think it is a slightly sweet sake.
