ShinkazuIt has the natural dryness of sake with the umami of rice and depth of flavor, and is a great accompaniment to meals. It can be used for everything from fatty food to sashimi.
I have never been involved with this wine, not even for a millimeter, but I think it would be a good choice for restaurants and proper drinking establishments.

100% sake brewing rice
The aroma has a hint of sweetness.
In the mouth, it is smooth and banana-like sweetness spreads. A bit of bitterness is delayed a bit, and finally sourness is felt. The ever-changing flavor is enjoyable 😊.
Although it has little fragrance, it is easy to drink with moderate sweetness and enjoyable with the change from bitter to sour taste 🍶.

The second was a sake from Fukui, a brand I didn't know existed. It was easy to drink without feeling the 17% alcohol content. It is a good sake for a meal.

Freshly pressed choice again. It was mellower and gentler than the previous Gokei (Ibaraki Prefecture). The freshness is the same.
