tjrThis was the first sake of the day and the most delicious. As the name "Yamahai" suggests, the freshness came first, followed by a rich umami flavor that was blissful. The toji seems to have changed at the right time. I paired it with sardine cod roe. tjrA H28BY Yamahai brewed with a dark caramel color and aroma, with a high sugar content and a Shaoxing-like flavor.
